What is the one "must do" special activity you would choose?

Going back to Disney in May 2015. Our first family trip was May 2014! I crammed in as much as I could, but we didn't get to do everything! We also didn't get to relax very much :) The next time around we want to take a break day, not do maybe more than one character meal (first trip we did 4 in 6 days!), not get the dining plan (too much food for us), and plan one special activity. What is your favorite/the best activity other than the parks? I cannot decide between the many there are...luau at Polynesian, mickey's bybbq, pirate fireworks cruise, kid pirate activity (we plan on staying at CBR next time), etc. We did the wishes dessert party this time, and I wanted to try something different next May. Our son will be 6 by then! Thanks in advance for the suggestions!
 
Things we have done that were a lot of fun on our non-touring days:

Rent a boat and tour the Disney waterways

See La Nouba

Play a couple rounds of mini-golf
 
We REALLY enjoyed the luau at Poly and also really enjoyed a day on Bay Lake where we did water tubing and rented jet skis. :)
 
My kids loved the Pirate Cruise that is offered for kids only. It gave them a chance to feel big and independent and gave us parents a couple hours to ourself. They've also enjoyed the Pirate League experience twice now - although this last time in May they said they don't want to do it again. It was too hot and the makeup came off very easily - seemed like it was on everyone in our party's clothing!
