What is the best day (low crowds) for MGM & Epcot?

My husband and I will have a long adults only anniversary weekend in May (will be in WDW from Friday afternoon the 16th thru Tuesday morning the 20th). We will spend the majority of our time in Epcot & MGM since we don't have the kids. I figure we will do a "Drinks Around the World" one day. Another day will be MGM. Which days would you suggest (Sat, Sun, or Mon) would be the best?

Haven't even gone on our Jan trip yet & we're planning the May trip - pathetic

From what I have gathered, the BUSIEST days for MGM are Sunday and Wednesday and for Epcot Tuesday and Friday. Therefore, I would guess any other day that wasn't an early entry day would be a good choice. Early entry for MGM is Tuesday and Saturday and for Epcot it's Wednesday.
