What is for dinner tonight! 3-15-06

I am sitting here trying to think what to make tonight. Today is my SO's birthday and he has school until 7:30. Usually we have leftovers on his school nights but today is his birthday. It is also my BIL and my friend's birthday so I thought about having a big meal but don't think my BIL and sister will want to eat that late. I just don't know what to make!!!

a little bit of everything! My DD has her HS sports banquet tonight and it is pot luck. Hopping to come away with a few new recipes!

I'm not really sure. I might be watching my 2 nieces tonight. If they come for dinner, it'll be salad, hot dogs (with sauerkraut for the 7 yr old & me) & fudge bars for dessert. If they're not coming, I've got some frozen shrimp I can cook.

Meatball hoagies w/ mozzerella cheese. :thumbsup2

I believe I'mgoing to make chicken Alfredo, salad and garlic bread

Backup plan is seared scallops with a lemon-chive sauce and an asparagus risotto, again with arugula salad. It will depend on whether I feel like stirring the rice or not.

This cracks me up--and I mean no insult! You've got a gourmet meal going here and it will all depend on whether you want to stir the rice!? :goodvibes
I know, I know, risotto is time-consuming... But this struck me as funny.
BTW--I'm coming over for dinner--either sounds yummy! :sunny:

This is a late night for DH, so I'll end up with one of my usual dinner-on-my-own standbys. Probably either a tuna melt on a whole wheat bagel or black beans with rice.

It's Wednesday Night Dinner Night at my church & they are serving corned beef with all the trimmings :goodvibes .

agnes!

ETA; Oh NOOOOOOOOOOOOOO...dinner's been cancelled, so now I actually 8do* have to plan something :rolleyes2 . Phooey.

We are having fried chicken, mashed potoatoes with gravy, broccoli and biscuits.

I found a half a roast at the grocery store this morning marked down to $2.50! I kid you not. It looked like someone had a whole roast cut in half--sawed right through the styrofoam plate and everything. I guess they couldn't sell it as a whole roast :confused3 Anyway, I invited Mr. Half-Roast to hop in my "hot tub" with those kinky girls neighbors, Potatoes & Carrots. :thumbsup2

Tonight will be Papa Murphy's pizza for my family!

Chicken fajitas with a homemade feta & avacado salsa.

I may fix some Sangria to go along with it! If I do, I will be asleep on the couch by 8:00. :smooth:

Well if I fell like making something,I will fix spaghetti and garlic bread.
If not I will have DH pick something up.

Something easy and quick; both DS have orthodontic appts at 4:00 and its forever and a day to get home; probably the good old standby, Spaghetti, Salad and Garlic Bread; I hope DH doesn't read this thread; he'll start complaining :p

Thanks for the Chicken Recipe!

Ughh... I JUST started a cold yesterday so I don't know if I'll feel like cooking or not... :guilty: IF I do cook, it will be something easy tonight like Zaterans cheesy Jumbelia (sp?) and Taquitos.

I have cola roast beef in the crockpot and it smells sooooo good!!!! I will make gravy out of the delicious drippings and pour over mashed potatoes.

Our favorite meal by a longshot!!!

Avocado-Feta Salsa

4 plum tomatoes, chopped
2 tablespoons finely chopped red onion
2 garlic cloves, minced
1 (4-oz) package crumbled feta cheese
1 tablespoon chopped fresh parsley (optional)
1-2 tablespoons red wine vinegar
2 tablespoons olive oil
2-3 avocados, chopped
Tortilla chips

Stir together first 7 ingredients. Gently stir in avocado just before serving. Serve with tortilla chips.

I usually add more feta, garlic, tomatoes and avocados. Warning, this is addictive!
