I am not cooking tonight for nothing in the world! Tonight will be soup & sandwich night. I got some lunchmeat yesterday while at the grocery store. :thumbsup2
 
I'm thinking of breaking out the Foreman and making some pork chops or chicken. :thumbsup2
 
Meatloaf, mashed potatoes, a veggie (haven't decided which one yet).

Dessert is fruit & fruit dip.
 
I am making my roasted chicken with garlic, lemon, and rosemary. Oh man, it rocks :) If anyone wants the recipe I will post it. It's sooooo simple :)

My grandmother is coming to help me to some spring cleaning today (help me do some things I can't reach, like re-hanging the curtains after I've washed them). So I told her to plan on eating with us :)

I think hot roast beef sandwiches. Just something quick and easy. Any ideas on what I can make to go with it? :confused3
 
Garlic Roast Chicken with Rosemary and Lemon
2 ½ lbs. boneless, skinless chicken breasts, cut into thirds (I forget about the "poundage" and just buy 2 packs of 3 breasts)
6 cloves garlic, crushed but NOT chopped
3 T. fresh rosemary leaves (you can use dried too)
3 T. EVOO (just enough to coat the bottom of a 9x13 casserole dish)
1 lemon, zested and juiced
1 T. grill seasoning (I use McCormick's Montreal Steak)
½ cup white wine (I prefer Sutter Home's Pinot Noir)

Preheat oven to 450.


Arrange chicken in a 9x13 casserole dish. Add garlic, rosemary, EVOO, lemon zest, and grill seasoning. Toss and coat chicken in all the ingredients, then place in oven, uncovered. Roast 20 minutes. Add wine and lemon juice to the dish and combine with pan juice. Return to oven and turn oven off. Let stand 5 minutes then remove chicken from the oven. Spoon pan juices over chicken and serve.

*Note: the pan juices are SOOOOOOOOOO good. Make sure you make rice or something so you can soak them all up!!*

Lisa, if your making open face, you could add mashed pot. or some hot buttered noodles! If you making hot rb. sandwich, I would add pot. chips and pickle, like they do when you eat out! Tonight is a good night for what your having, OK expect me over around, what time did you say we are eating? :) I'll bring a dessert! :teeth:

tonight we are having:
tequila lime baked haddock, with sweet and reg baked pototes and corn. super easy meal.
 
Cheese burgers and a Lipton rice side dish- garlic butter.

Barbeque night here, barbequed pork, baked beans and corn, maybe some cornbread muffins.
 
I'm solo for dinner so I will probably buy a frozen box of Tyson's chicken popcorn
 
After reading the things everyone grew up eating I think I'll make some spaghetti with ketchup, some mayo a peanut butter sandwiches and hot jello shots for dessert. :rotfl2: :p Think my almost 2 year old and 3 year old will eat that?? It seems like whatever I make, they end up with string cheese for dinner anyway but DH may be a hard sell!! Amy

Tonight we are having a one-skillet meal that has (low-fat) kielbasa, celery, onion, peppers, tomatoes, pasta and cheese. I am also making a chocolate cake with vanilla frosting for my son who will be home later for a visit. :goodvibes
 
Hhmm you guys have my wheels turning, I want something really good tonight. Not the same old stuff.
 
Right now I am leaning towards making a chicken pot pie with an arugula salad on the side. I have all the ingredients in the refrigerator. (confession: I cheat and use store-bought puff pastry for the lid. I can't make pie crust from scratch to save my life!)

Backup plan is seared scallops with a lemon-chive sauce and an asparagus risotto, again with arugula salad. It will depend on whether I feel like stirring the rice or not.
