What is a nice side dish with ham?

Broccoli Casserole

1/2 cup each diced onion, green pepper, celery.
1 cup cooked rice
1 large pkg frozen broccoli pieces (you can cook this is you want to, I just usually run hot water over it in a colander)
1 can cream of mushroom soup
1 cup velveeta
salt and pepper to taste

Saute onion, green pepper and celeryin butter. Mix every thing together and put it in a Pam'ed casserole dish, bake at 350 for 40 min. I usually double this recipe put it in a 9 X 13 dish. You can also use uncooked Minute Rice, just add 1/2 cup of water.
 
We like FuFu, but that's not a casserole. ;) I have a couple casserole recipes.

Sweet Potato Casserole
3 c mashed sweets
1/4 c sugar
1 stick margarine, melted
1 tsp vanilla
2 eggs, beaten
Topping:
1 c brown sugar
1/3 c margarine, melted
1/2 c flour
1 c chopped nuts
Mix topping ingredients until crumbly. Set aside. Mix all other ingredients & place in casserole. Cover with topping. (Recipe has no time or temp.)

Sweet Potato Casserole
4 sweets, cooked & mashed
1/4 c butter
2 beaten eggs
1 tsp vanilla
1/3 c milk
Cook & mash potatoes; add remaining ingredients & mix well. Put in 13x9 pan.
Top with:
1/3 c melted butter
2 Tbl brown sugar
1/2 c flour
1 c pecans, chopped
Bake at 350 for 25 min.

Sweet Potato Surprise
6 - 8 sweets
1/2 can pineapple (undrained)
1/4 - 1/2 c brown sugar
butter
mini marshmallows
Cook & peel potatoes; mash into baking dish with pineapple. Sprinkle with brown sugar & several pats butter. Mash everything together & bake at 250 for 20 - 25 min, until bubbly. Cover top with mini marshmallows & bake again until top is brownish.

Scalloped Sweet Potatoes and Apples
4 medium-sized sweets
3 large tart apples
1 tsp salt
1/4 c butter
1/2 c maple syrup or honey
Cook potatoes & cut into 1/2" slices. Core & slice apples into 1/2" rings. (Do not pare.) Saute apple rings in 2 Tbl butter until light brown. Arrange alternate layers of potatoes & apples in a greased casserole. Make a syrup of remaining butter & syrup/honey. Pour over ingredients & bake at 375 for 40 min. Serves 6.
 
I'm not a recipe kind of gal--I judge when I cook.

That said, I just asked a co-worker for her sweet potato recipe because I've heard hers is to-die-for. This is what she told me to do.

She microwaves washed sweet potatoes with the ends cut off until they're soft. She cleans away the skins and puts the pulp into a mixing bowl. Then she adds a few tablespoons each of butter and brown sugar, a bit of vanilla extract, and some cinnamon. She whips them until they're pureed, then stirs in some walnuts.

She puts the mixture into a casserole dish and tops it with marshmallows. Then, she bakes it until the marshmallows are browned. You can definitely make this ahead of time and bake it on party day.
 

I want to see the pineapple stuffing recipe. Sounds interesting. I have a scalloped pineapple recipe that my family loves. Bet they'd like this, too.
 
I was going to say scalloped potatoes, applesauce and green beans with bacon and scallions.

There is a great brand of cheese mashed potatoes called Idahoan. You buy them in envelopes at the grocery store. Just add water and they are delish!!
 
Here's the Pineapple Stuffing recipe for those who asked:

1 stick margarine, softened
1/2 cup sugar
4 eggs
20-oz. crushed pineapple, drain most of the juice
5-7 slices white bread, cubed

Preheat oven to 325 degrees. Spray 2 qt. casserole dish with Pam. Beat margarine and sugar until fluffy. Add eggs and pineapple, then fold in bread. Bake until golden brown (about 35-40 minutes). Serves 6.

***I usually double this and put in a 9x13 glass dish. Just adjust your baking time.

Depending on what kind of bread you use, you may need more or less. It should look slightly soupy before you bake it.
 
pear salad is very easy to make and seems to be a "southern thing". The ingredients sound strange together but it is pretty goods.



Just take canned pear halves and fill the little indention with mayo or sourcream., then sprinkle with shredded cheese (usually cheddar or longhorn colby) and top with a marrichino (sp?) cherry. Oh yea, place each halve on a lettuce leaf.
 
Homemade mac and cheese...my grandmother taught me how to make the best!!!!!
 
Sha_lyn - Maybe not just a southern thing! Ours is a little different & we don't call it a "salad" - just "pear on a lettuce leaf". We put cottage cheese in the middle, not mayo/sour cream, and we skip the hard cheese.
