...the other couple that is suppose to be going with us backs out last minute? We have all of our ADRs made for 4 people. Will the restaurants not seat us if our ADR says it is for 4 people and there are only 2 of us there?
 
You will be seated, no worries about that. Worst case is having to wait for a table for 2 to open up if the place is very busy. But even that won't be long. You most likely would not notice the difference. Restaurants deal with this type of thing all the time and never turn people away for this. They'll take care of you.

It's quite easy to check in with fewer people. It's tough (or impossible) to show up with more and still get seated.

Keep your ADR's for four, and that way you'll be safe either way.
