It depends on what kind. If it's hot dog sized, then just like a hot dog with grilled onions works great. If they're small links, then as you would breakfast sausage.
I start with mixed vegetables....broccoli , sliced carrots, sliced mushrooms and red pepper. I salute them with garlic and olive oil. After about 8 minutes I add in the cut sausage and about .5 cup of chicken broth. I cover it and let it simmer about5-10 minutes. Meanwhile I boil bow tie pasta. Once pasta and sausage are done I add it all together. Then I flavor with Italian dressing. I serve in bowls and top with Parmesan or feta cheese.
I like this recipe. It was the first one that came up when I searched, we tried it and everybody liked it so that is what I do. I don't usually have shallots so I use whatever type of onion I have on hand.

As sausages go, this one is pretty lean and light-tasting. I'd go with a richer side like maybe a creamy pasta and some spinach sauteed with garlic and a splash of balsamic.

....in keeping with the 'apple' theme', I thinly sliced some Granny Smiths and sautéed them with shredded cabbage and one chopped small onion, cut the sausage into 'coins' and sauté`, add a little S & P to taste and cook over low flame for about 25 minutes. Serve with German potato salad.
We buy those all the time, along with the bacon/pineapple variety. We like the apple ones in a baked ziti - top ziti/pasta sauce with ricotta, sausage and shredded cheese and bake. We also eat them for breakfast, just browned and serve with pancakes.
