What food is your state/home known for? How do you make it?

Essex, but I believe they originated in Millburn. I can get them at most delis here.

I've tried cooking pork tenderloin. You have to be careful with it because overcooking makes it tough when it's supposed to be the softest cut.

I cook it about once a week, grilled or in the oven, but I’ve recently discovered the sous vide makes it perfect every time.

It’s not around here at all. We are originally from Bergen county and it wasn’t heard of there, either. My DS’s wife is from Union county, evidently it is a thing in Union County & Essex county. Not sure where else, but it is a small area of NJ that has them.

It’s similar to a corn beef special: corned beef, cole slaw, Russian dressing on rye.

Hudson Valley, NY here - I get to enjoy all the surrounding NY food. Pizza, bagels, etc. But if you are looking for some apples or other farm fresh items like corn - come on over!!!

Texas, but 20 miles from the coast so we also have fresh shrimp, trout, redfish, blue crab and oysters.

Where I live in my state it's BBQ. And everyone has their favorite place to get it of which there are many to choose from. The metro takes BBQ very seriously with big competitions one of which is the largest.

People do make it at home, some have smokers but generally I'm going to get it at a restaurant. A relative of my husband's started up his own BBQ place where all they do is carry out orders or catering borne out of his love of smoking. He actually needs to upgrade his equipment because right now he's using home smokers rather than commercial ones.

Bierocks are also big for my state as a whole but are lesser known in my area with only a handful of places to get it

From NY which is a blend of everything so:
Sausage and peppers preferably with broccoli rabe sausage from the pork store, fresh Italian Bread, fresh prosciutto bread which is called pizza bread in Jersey, knish with mustard, potato pancake (sour cream because applesauce is just wrong), Jamaican plantains with coca cola sauce and pineapple soda, Mamouns falafel in the village with the best baklava ever, cheese fries with gravy in a diner somewhere around 2am, pizza both Neapolitan & Sicilian, and Ralphs Ices which are Italian Ice.... and of course zeppole.

In Pa I discovered that they have a mini version of a knish which isn't crispy but is wrapped in a pasta like wrapping called a pierogi sauteed in butter and onions & served with sour cream, here they love a tomato pie which is a sicilian without cheese, they do not call it Italian Ice and call it water ice instead, pre Lent they go bananas over Fastnaught which are a yummy plain donut like pastry, New Years Day is all about ham and sauerkraut, and all the deli counters have eggs soaked in beet juice which are a local favorite, although I have not been brave enough to try one in 20 plus years.

Up in Mass its lobsta roll and oysters are selected based on the waters they called home, at first I scoffed but truly there is a difference in taste - go figure.

I always forget pierogi love isn’t everywhere. It’s just a way of life here! And pickled eggs used to be my favorite thing, which is weird because I hate beets!

Where I live in NJ some towns have different heritages, in a few towns away is a town where 51% of residents are polish, there are a bunch of great pierogi places (Wallington).
