Unless the menu at the French Market changes (I used to LOVE eating there), I won't be back. It was some of the worst food I've ever eaten, for around the same price as eating at Cafe' Orleans. The jambalaya was awful...it was like Uncle Ben's rice, not cooked all the way, topped with a ketchup-y sauce, a bunch of lukewarm vegetables, and a few tiny morsels of meat. And served with some of the worst (cold, dry) cornbread ever. So gross.
I sure wish they'd serve better food there (I LOVE Cajun/Creole/New Orleans style food...NOS is my favorite place to eat in all of DLR...), because it's such a nice facility. The serving area is very well themed, and the dining area, with the live music, shade from the tall trees, and all that wrought iron really immerses one in the whole French Quarter theme. Besides a yucky meal at Ranch del Zocalo a few years ago when they had a different menu, the French Market (with its current menu) is really the only place I've eaten in either of the Parks that I didn't enjoy.
As for can't-miss places to eat...Cafe' Orleans & Carnation Cafe', for sure. Not to miss at Cafe' Orleans: gumbo (or the gumbo crepe), pommes frittes, and Mickey beignets. Not to miss at Carnation Cafe': loaded baked potato soup; seasonal pot pie (the turkey/cranberry potpie they have for the holidays is sooooooo good!)
