I'd recommend buying the butternut squash already peeled, if you're not baking it. I buy it pre-peeled, cut into chunks and throw into a large microwaveable bowl, cover with plastic wrap and cook on high for probably close to 10 minutes or until really soft. I usually drain out a bit of the water and then take a potato masher and mash the squash. I add about 4 T. butter and then add real maple syrup. Our family likes it sweet, so probably around 1/3-1/2 cup? Add a bit of salt, pepper and a dash of cloves and I'm done. The squash has become my responsibility now for family gatherings, so I guess people like it!
