Strange question, I know, but what does butternut squash tastes like? lol. I have never had it- and want to try it, but don't know of ways to cook with it.
TIA for any help!!

It tastes yummy!
The easiest way to cook it would be to get a fresh squash, boil it whole in a big pot for about an hour, then cut it in half and take out the seeds then mash up the squash mix in some butter, brown sugar a a little maple syrup. It's easy and delish.
There are so many recipes for butternut squash, you could make a soup, ravioli, lasagna, soufle etc.
Hope you enjoy!

Do you like pumpkin? If you like pumpkin I would think you would like the squash. Its really yummy!!!!! You can buy the frozen pre-made in the grocery story to try .

BUTTERNUT SQUASH is the BEST!!!!! :goodvibes

Exactly like the other posters have said....YUMMY!!! :teeth:

We wash the raw squash, cut it in half, scoop out the seeds, put the two halves in a baking dish with added water, covered with foil, at 400 for about an hour. Scoop out the squash, it will be very soft, mix with butter and brown sugar to taste, serve. Yum!

I have a recipe for butternut squash casserole that is delicious. I make it for Thanksgiving and Christmas. It tastes like a dessert.

Depends on the tastebuds. :) I'd say what I think it tastes like, but then I'd get banned. :teeth:

Ok, here it is- I just made this a few days ago- yummy! :goodvibes

Baked Turkey Tenderloin with Butternut Squash

1/3 cup bread crumbs
1/4 cup grated parmesan cheese
1 1/2 TB olive oil, divided
1/2 TB butter
1 small yellow onion, cut in half and thinly sliced
1 lb turkey tenderloin cut in bite size pieces
1 tsp dried thyme
1/2 tsp fresh sage, chopped (I guess you could use dried also, I use fresh)
2 cloves minced garlic
sea salt, to taste
pepper, to taste
1 small to medium size butternut squash, seeded, peeled and cubed into bite size pieces (about three cups or so- sometimes I have four to make a bit extra)

Preheat oven to 375 F

In a small bowl, mix together bread crumbs, cheese, and one TB of the olive oil. Set aside.

In an oven proof skillet, heat remaining olive oil and the butter over medium heat. Saute onion for about five minutes. Add turkey, thyme, sage, garlic, salt & pepper, cooking until turkey browns. Add the squash and continue to cook for a few more minutes. Sprinkle with bread crumb mixture. Cover the skillet and and transfer to oven. Bake for 15-20 minutes or until turkey is completely cooked and squash is tender.

This is very delicious!

"Special Squash Casserole"

3lb butternut squash, peeled, seeded and cubed
3/4 cup milk
6 TBS butter or margarine, melted
3 eggs beaten
1/2 tsp vanilla extract
3/4 cup sugar
3 TBS all purpose flour
1/2 tsp ground cinnamon
1/8 tsp ground cloves
1/8 tsp ground nutmeg

Topping:
1/2 cup vanilla wafers crumbs (about 15 wafers)
1/4 cup packed brown sugar
2 TBS butter or margarine, melted

Place squash in a large saucepan; cover with water. Bring to a boil; and cook for 25 -30 minutes until tender.

Drain and place in a mixing bowl; beat just until smooth. Add milk, butter, eggs and vanilla; mix well.

Combine the dry ingredients; add to squash mixture and mix well.

Transfer to a greased 2qt baking dish. Cover and bake at 350 for 45 minutes.

Meanwhile, in a small bowl, combine topping ingredients until crumbly; sprinkle over squash. Bake uncovered for 12-15 minutes or until heated through.

Thank you, thank you dear ladies!! :cloud9: I'm going to try both over the next several weeks! :goodvibes

It's also a little like sweet potatoes. Now I'm really craving the Roasted Butternut Squash soup at AKL, Mara's and Bomas. Unfortunately, I've bought what's called butternut squash soup here, but it's not at all the same.

Funny you should mention butternut squash. I had it for the first time yesterday during lunch at Houston's. It was roasted and delicious!!!!!!!! I bought some today and there are baking instructions right on them, so I'm going to cook some tomm!

I got this recipe from the Barefoot Contessa's Christmas special on the Food Network. I have made it the past two years for Christmas and it is delicious. I was never a huge fan of squash but love this version:

Caramelized Butternut Squash
from The Barefoot Contessa Cookbook

2 medium butternut squash (4 to 5 pounds total)
6 tablespoons unsalted butter, melted
1/4 cup light brown sugar, packed
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Preheat the oven to 400 degrees F.

Cut off and discard the ends of each butternut squash. Peel the squash, cut them in half lengthwise, and remove the seeds. Cut the squash into 1 1/4 to 1 1/2-inch cubes and place them on a baking sheet. Add the melted butter, brown sugar, salt, and pepper. With clean hands, toss all the ingredients together and spread in a single layer on the baking sheet. Roast for 45 to 55 minutes, until the squash is tender and the glaze begins to caramelize. While roasting, turn the squash a few times with a spatula, to be sure it browns evenly. :thumbsup2
