What do YOU make with leftover ham???

The ham I made last weekend was a bit larger than our usual & I'm getting tired of just eating it warmed up for dinner. We've used it for sandwiches & chopped up in omelettes. I usually use the last bits for ham salad, but I still have about 3 days worth.

I've made either bean, lentil or split pea soup in the past, but this is too much for that & I'm not really in the mood anyway.

What do you do with your leftovers?

Chop it up finely and put it in au gratin potatoes -- I usually end up eating it for breakfast that way, but it'd make a good dinner, too.
 
It also goes well chopped up in scalloped potatoes.
 
We just finished ours up tonight in a Ham Casserole:

Ham
Cheddar cheese
Broccoli
top with:
1c. milk
2 eggs
1/2 c. bisquick

bake 45-55 min @ 375

Very quick and easy

StarCloud - I really like to add ham to scalloped potatoes, but only have 4 small potatoes. That won't cut it with this family, unless it would be a side dish. :rolleyes:

ChiMom - I copied that recipe & might try it tomorrow night. I've never heard of that before, but were recently had Chicken Divan & it went over pretty well.

HopeMax - I wouldn't have thought of had win fried rice since it's not something you see at a Chinese restaurant. It sounds good, though! ;) You reminded me that we used to make a curried rice dish (main course) that used a bunch of leftovers. I always used "ham loaf" though, but I can't even get it anymore. I think we'll have that tonight.

In the past I've made a Ham Tettrizini - angel hair pasta, thinned cream of mushroom or celery soup, and mixed frozen vegetables.

Hubby also makes a wonder soup with the bone and final bits (I buy the "cheap" hams with the bone - we like them really well) - the recipe is on most packages of navy beans.

Another options is the au gratin potatoes already mentioned but I recently found a new approach to this one. Mix up sliced potatoes and diced ham and put it in a casserole. Take one can of Campbell's cheddar cheese soup and mix with an equal amount of milk. This adds a far lower level of carbs than traditional cheese sauces! Plus it is so easy my kids can whip it up.

Do you have Zatarain's meals in a box in your "rice aisle" of the grocery store? I like to add ham to the red beans and rice and the jambalaya. It's easy, quick and CHEAP!!:p

I throw small quantites into ziplock bags and freeze it for future omelettes.
 
Homemade baked macaroni & Cheese with diced ham and peas - yum!

I also freeze when I have way too much!
 
heres mine

2lb bag of hashed browns
2 sticks of butter or margarine
1 can cream of celery soup
1 16 oz sour cream
1 12 oz shredded cheddar
chips or corn flakes
Left over ham

Place frozen hashed browns in a 13x 9 casserole dish, melt one stick of butter and drizzle over potatoes. Mix sour cream, soup and cheddar cheese and chopped ham together , spoon over potatoes. Melt addtional stick of butter, crush chips or corn flakes into the butter and mix well. Spread over top of casserole. Bake 40 minutes at 375 or unitl bubbly and hot. YUMMY!!!!

You can also add your favorite veggies to this to make it at one course meal. I love to add brocoli......



Another idea is to boil the ham for several hours with the bone if you have one. Add pealed potatoes, fresh green beans and wax beans to the broth and cook til tender. Makes a wonderful hearty soup and is very easy to make. You can use canned veggies to save time too!

I have another awesome recipe but its one of those a little of this and that things not sure how it work written down but here goes.

Boil your ham and bone til you have a nice broth. You will need to do this in a large pot 6 - 8 quarts.

Peel some potatoes and chop into decent sized pieces.NOt to small or they will cook before you homemade noodles do.

Place a pile of flour on the kitchen counter (about 3 inches high and 8 inches across) make a well in the middle of the pile, add two eggs and some room temperature ham broth to the well. Mix slowly into the flour pile using only what you need of the flour to make a nice dough.If needed add more flour. This is a very messy process but well worth the time. After you have a nice dough ball, cut it in half and set one half a side. Flour your counter top lightly as you want the dough to stick just a bit to make it easy to get thin.Roll out the dough very very thin. Cut into small 2 by 2 strips.Repeat with the other piece of dough. Bring your broth back to a boil, dredge the strips in flour and drop into the boiling broth. After you have added all your strips of dough, add your potatoes too. Cook until the noodles are tender. The added dredging of the flour will thicken the broth to a creamy consistency. Pepper to taste.

This is one of familys favorite. They call it ham pot pie.

Little Ham pies


2 Packages of Cresent rolls
2 cups ham (cubed)
2 cups cheese (cubed)
1 pint of sour cream
salt, pepper mix all together...


take 2 triangles of the cresent rolls and pinch the 2 together to make a square. Fill the square with the ingredients. Fold all 4 sides up and pinch together so the filling doesn't fall out.
cook for 20-25 min. in 350 oven

you can substitute any type of meat or cheese...these are great cold or hot and are so easy!

I chop up the ham into small pieces, cook a bag of broccoli/cauliflower/carrots, mix together with warmed premade alfredo sauce and serve over garlic angel hair pasta. Yummy

Also do the soup and omelete thing, family hates scalloped potatoes unfortunately. Made a potato/cheese/ham thing in the crockpot and only 1 out of 4 of use liked it.

I got smart this year and sent most of the leftovers home with my guests...I made a 10 lb. ham.
