What do you know about apples?

Continuing to work on my compilation of this HUMUNGOUS collection of muffin recipes I have collected over the years and I have noticed that many of them call for "tart" apples..

Would someone be so kind as to tell me which ones (by name) are considered "tart"? I'd really appreciate it..

I am copying all of these recipes by hand into a HUGE binder.. Thank goodness I've already HAD carpal tunnel syndrome or I sure as heck would have it by the time I'm done with this venture.. LOL

Gala is my fave eating apple....Granny Smith is the standard for most baking recipies(also Rome)
 
winesap is a really good tart, crisp and juicy apple. Yum, yum!!
 
Gala? Winesap? :confused: Are these "regional" apples? I can't remember ever hearing of or seeing them anywhere..

Guess I'm just not "up" on my apples.. LOL:crazy:
