I like to make a pot pie afterwards. Depending on what you have leftover it's great.
Usually shred the turkey, mix in any vegetables we have left over (usually creamed spinach, sometimes green bean casserole etc) Add in a bag of frozen corn/carrots and peas.
Then I make a cream based sauce - stick of butter, 1/2 C flour, 1.5 C milk, 1.5C water, salt pepper and the leftover gravy. If I do not have enough leftover gravy I will add a boullion cube. Mix that in with the turkey mixture, put in a casserole dish, top with leftover mashed taters and bake.
