What do you do with Thanksgiving leftovers?

I like to make a pot pie afterwards. Depending on what you have leftover it's great.

Usually shred the turkey, mix in any vegetables we have left over (usually creamed spinach, sometimes green bean casserole etc) Add in a bag of frozen corn/carrots and peas.

Then I make a cream based sauce - stick of butter, 1/2 C flour, 1.5 C milk, 1.5C water, salt pepper and the leftover gravy. If I do not have enough leftover gravy I will add a boullion cube. Mix that in with the turkey mixture, put in a casserole dish, top with leftover mashed taters and bake.
 
when i make them i mix the mashed potatos with grated onion, add some salt and pepper with egg to bind (and some bread crumbs if i need some more binding). i cover in salt and peppered flour and then fry.

we like to top them with applesauce (although ds likes to eat them with catsup like he would hashbrowns). we've also had them for breakfast topped with country gravy and sausage.

My favorite recipe for leftovers is called WINTER WARMER HEARTY CHICKEN BAKE from Readers Digest. Although it calls for cooked chicken, we use turkey & it turns out absolutely delicious. The only changes I make is to use more cheese & onions & larger casserole dish.

Winter Warmer

3 cups hot mashed potatoes
1 cup shredded cheddar cheese, divided
1 (2.8 oz) can durkee french fried onions, divided
1 1/2 cups cubed cooked chicken
1 (10 oz) pkg frozen mixed vegetables, thawed & drained
1 (10 3/4 oz) can condensed cream of chicken soup
1/4 cup milk
1/2 teasp durkee ground mustard
1/4 teasp durkee garlic powder
1/4 teasp durkee ground black pepper

Heat oven to 375 degrees. In a medium bowl, combine potatoes, half the cheese & half the onions; mix thoroughly. SPoon into greased 1 1/2 quart casserole dish spreading across bottom & up the sides to form a shell.

In a large bowl, combine chicken, vegetables, soup, milk & seasonings; pour into potato shell. Bake uncovered for about 30 minutes or until heated through. Top with remaining cheese & onions; bake 3 more minutes or until onions are golden brown. Let stand 5 minutes before serving. Makes 4 to 6 servings.
 
I think that it has just become tradition in many families (like your sister's) to have gumbo on Christmas Eve. I'm not aware of any special meaning, but maybe someone else knows more about it! We've had it several times on Christmas Eve or at my DH's family Christmas party. I think it is a convenient thing to serve, with so many people dropping in at different times, after church or whatever. When you have a pot of gumbo on the stove, you can eat whenever you're ready.

I love the shortcuts like roux from a jar, but I can't stand most gumbo mixes like Zatairan's. There's something about the spices they contain that I don't like.

Yea, dsis doesn't use any of those shortcuts either. It takes her all day to make it and she usually does it a day or two ahead. Sure is good though especially when its the weather is wet and cold!
 

We always have creamed turkey on toast and turkey salad. The turkey salad is actually a hot dish. You use gravy, turkey, onions, celery mayo and cheese. I think that is all. Oh on top you put cheese and then crushed potato chips. If we don't have enough turkey for these 2 dishs my family is really unhappy.
