What do you do to your vegetables....

....to make them taste good. Do you cook them and eat them naturally or do you add spices or butter or something special to them? I am looking to jazz up my veggies without adding too many things that aren't good for you.

Yum! Just cook 'em and eat 'em. But sometimes I like Honey Mustard fat free dressing on asparagus. Fat free sour cream and fresh chives or scallions makes a baked potato mighty tasty. :)
 
I know I’m weird, but I like them burned! I sauté them in olive oil and garlic until they’re very brown and add salt. I probably cook all the vitamins out of them, but I LOVE them. I normally do this with green beans, broccoli, asparagus and brussels sprouts. I also deep fry cauliflower until it’s very brown and then salt it and/or add parmesan cheese, and it’s delicious – almost like having french fries.
 
I use spices to add flavor...dill, sage, tarragon, etc., depending on what veggie it is. Sometimes I will add a dab of low fat margarine.

We do that too! Its so......good!!!!
 
I usually just add some margarine and salt - sometimes pepper but I'm not much of a pepper person. We do steam our green beans and we don't eat anything but green beans and corn (sometimes I'll make mixed veggies but we are not big veggie eaters - cooked anyway).
 
I like them either raw or barely cooked so they are still crunchy. Nothing on them...even salad I will only eat w/o dressing. The only exception I can think of is spinach...like it with a drop of vinegar
 
We are big time veggie eaters here, fortunate to live in America's Salad Bowl region! Salinas Valley is where all the bagged salads come from.. so next time you rip open a bag think of us!

I cook veggies like green beans, potatoes, peppers and onions together with some rosemary and garlic in a little olive oil.

I am a big fan of Newman's dressing.. original and balsamic. Really good on warm green beans, carrots, cauliflower or broccolli.

My kids like RANCH on everything....

Try throwing a bunch of veggies in a pan with a little olive oil, garlic, eggplant, celery, onions, tomatoes, a little italian seasoning, also some black and green olives...mmmm a little like cappinata ( spelling) but just don't cook it too long.

I also make a zuccini/tomato/ onion bake.. just layer thin slices in a 8x8 pan with Italian seasoning and garlic.. you can cover it with bread crumbs and a drizzle of butter or olive oil and some parmesean cheese.. bake/microwave.. yummy... It is the only way Barry will touch "squish" as he so fondly calls any type of squash... silly man!
 
Butter and cheese covers a multitude of sins.

No, really I like all kinds of vegies. I think peas are my favorite. The only veggie Becky and Seth will eat is corn.

This is about as creative as I get with veggies:

For fresh green beans, I put them in a small pan with just enough water to cover them. Then add about a teaspoon of soy sauce, a tiny bit of peanut oil for flavoring and tons of minced garlic. Just simmer until their to your liking.

Also from Campbells: Put a can of tomato soup, a tbs. of vinegar, 2 tbs of soy sauce and garlic powder together and stir. Simmer until heated all the way thru. This makes a wonderful sauce to put over veggies like broccoli and cauliflower. Sometimes I put over white rice and chicken too.
 
The only veggie that I really add to is asperagus (? spelling). I like to cook it in a little bit of water and just a couple of tablespoons of butter. When it's almost done, I sprinkle some fresh lemon juice on top of it. The only way my family will eat it.

Other veggies are plain -- nothing added. Kids don't seem to miss it. My daycare children get all excited and clap their hands when we have cauliflower and/or brocolli. Strange, I know but it's good for them!

I just might have to try deep fried cauliflower. Sounds wonderful.
 
Well, here in the south, we normally just thro w a big ol piece of ham, or some bacon in the pot with whatever we are cooking! Delicious!

If, however, you want to watch the fat or sodium intake, there is a product in the mexican foods section of the store, called ham flavoring powder, that you can sprinkle over your cooking veggies, it's a pretty good substitute for the ham.:)
 
I accidently came across the idea of adding thyme to peas. That and a little butter or margarine... yum!

For green beans, we like them steamed crunchy and tossed with teriyaki sauce and sesame seeds. Very good.

Try steaming them over beef or chicken broth, or lemon juice, or even white wine for a little added flavor, without any extra work.
