What do you cook to have leftovers?

I have been looking for Boston Butt and have been unable to find it at the grocery store(and I'm too embarrassed to ask hey where is the butt?)

Hee-Hee!! I know!! Just ask someone who works in the meat department what the best cut of meat is for pulled pork...and then you will not have to say butt! :lmao:
 
Roast chicken on day is a chicken enchilada casserole the next night.
Roast beef becomes a beef pot pie ( I chop up all the left overs , throw it in a 9x13 pan and top it with a homemade biscuit crust.
I always grill extra chicken breast, hamburgers or steak to use in salads or wraps.
Today is a big pot of crock pot pizza, that I hope will make meals for a least 2 days.
 
I use my crockpot all the time...even for roasts...how do you make crockpot pizza?

Ingredients
1 package (16 ounces) wide egg noodles
1-1/2 pounds ground beef or turkey
1/4 cup chopped onion
1 jar (26 ounces) spaghetti sauce
1 jar (4-1/2 ounces) sliced mushrooms, drained
1-1/2 teaspoons Italian seasoning
1 package (3-1/2 ounces) sliced pepperoni, halved
3 cups (12 ounces) shredded part-skim mozzarella cheese
3 cups (12 ounces) shredded cheddar cheese
Directions
Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the spaghetti sauce, mushrooms and Italian seasoning. Drain noodles.
In a 5-qt. slow cooker coated with cooking spray, spread a third of the meat sauce. Cover with a third of the noodles and pepperoni. Sprinkle with a third of the cheese. Repeat layers twice.
Cover and cook on low for 3-4 hours or until heated through and cheese is melted. Yield: 6-8 servings.

Tonite we are having ham steaks with homemade mac and cheese and garlic bread. (wow that's all bad stuff hey- maybe I'll make some broccoli)

I have to food shop tomorrow so I'll have my weekly list then.
 
Crockpot pizza is a throw it all together meal. I don't really have a recipe, but here is how I made it today.
pizza sauce( I used 3 cans and I jar of spaghetti sauce)
rotini (I used Ronzoni Garden delight ) I used 2 boxes
pepperoni (I used turkey pepperoni - less greasy) I slice it into strips
sliced mushrooms (fresh or canned)
2 -3 lbs ground beef browned with 1 onion (drained)
shredded cheese (I used a Mexican shredded cheese)
I layer it in my crock pot, sauce, rotini, hamburger, pepperoni, mushrooms, sauce, some cheese and keep going ending with sauce and cheese. I did not cook the rotini first.
I started it on high, but should have kept it on low the whole time. The pasta cooked fine. There are many ways to make this, many use egg noodles , just google it. But this is the one my family likes. It was a hit with my oldest son's football team for their team meals. 3-4 moms would bring a crock pot full - they were all a little different, but the boys ate them all.
 
I like to do beans. Red beans and rice, butter beans, white beans. That I can serve for 2 days. When it is cold, I do gumbo or soup. Those can make 3 meals. Bar b que normally makes two days. Jambalaya either with rice or pasta also makes 2 meals. I had to work today so I could not make anything. :sad2:
 
Yesterday was baked ham. Today will be ham sandwiches and a casserole made with ham, sliced potatoes, cheese, and a little milk and flour (like scalloped potatoes). I'll slice the rest and freeze it to be used for a dinner, casserole or breakfast.
 
My favorite things to cook for leftovers are:

Roast chicken- we have it with all the sides that night and then use leftovers for chicken and dumplings, enchiladas, shredded chicken sandwiches, and sliced chicken sandwiches

Pot roast- I cook it in the crock pot and we have it like normal and then the next day I shred it and use it for sandwiches. With melted provolone on top it is yummy.
 
I like to make pot roast and then use the leftovers for roast beef enchiladas - layer shredded beef, refried beans, green chiles, cheese, and salsa on a tortilla, roll 'em up and put them in a dish, then cover with enchilada sauce and more cheese and bake. :thumbsup2
 
Pulled pork-- I don't like sandwiches so I just eat the pork out of the bowl the night I make it and and later in the week. I cook the pork shoulder in coke in the crockpot, then shred and mix with BBQ sauce. To reheat, I heat it up in a frying pan on warm-- gets nicely crispy that way.
I also make a huge plan of baked mac and cheese that I portion out and reheat through the week.
 
Chili - I like to make it on the weekend and then use leftovers when I make breakfast for dinner and top the scrambled eggs with chili and cheese.

Meatloaf - I use the leftovers in spaghetti sauce
 
I roasted a whole chicken for Sunday dinner and had enough chicken leftover for Chicken tortilla soup (boiled carcase for broth) and I also made a salad for my lunch today with chicken, strawberries, blue cheese crumbles, walnuts and a raspberry vinegarette dressing (was sooo great!). So, 2 dinners + 1 lunch for just under $5. for the Chicken!:cool1:
