What do you cook in hotel kitchen when on vacation?

1 lb boneless, skinless chicken (tenders or filets)
1 large can green beans, drained
6-7 new/red potatoes
1 stick butter or margarine
1 pkg Italian dressing mix

Place chicken on one side of 9x9 inch pan, put drained
green beans next to chicken, then place diced new
potatoes next to green beans. Melt butter and stir
in the Italian dressing mix. Pour butter mixture over
other ingredients and cover with aluminum foil.

Bake at 350 for 45-50 minutes.

One dish, healthy dinner, easy cleanup.

Take one chuck roast, brown it, toss in a box of french onion soup mix and a bag of baby carrots and a bunch of cubed potatoes into a crock pot. Cook all day, EXCELLENT pot roast.
 
I'm already planning meals for our stay as well! Here's one of my kids' favorites that I figured would be easy to whip up:

Chicken Noodle Casserole


4 boneless chicken breasts
6 oz. egg noodles
1 c. sour cream
1 can cr. of mushroom soup
1 can cr. of chicken soup
salt and pepper to taste
1 c. crumbled buttery round crackers
½ c. butter

Poach chicken in large pot of simmering water. Cook until no longer pink in center—about 12 minutes. Remove from pot and set aside. Bring chicken cooking water to a boil and cook pasta in it. Drain. Cut chicken into small pieces and mix with noodles. In a separate bowl, mix together soups, sour cream, and season with salt and pepper. Gently stir together cream soup mixture with the chicken mixture. Place in a 2-quart baking dish. Melt butter and stir in crumbled crackers. Top casserole with buttery crackers. Bake at 350 degrees for about 30 minutes, until heated through and browned on top.


You can cook the chicken in the microwave at the same time you're cooking the noodles on the stove to save time.

Other than that we'll probably have spaghetti one night. (My kids are pasta eaters) :) Maybe a rotisserie chicken with frozen mashed potatoes one night. I'll have sandwich fixings around for lunches, but that would work for a supper too. We're doing Hoop Dee Doo one night too. Now I can watch this thread to fill in the rest of the days! Or, there's always my Rachael Ray cookbook to fall back on.

If it seems a bit "buttery," we have on occasion reduced the butter to 3/4 stick and the Italian dressing mix to half a package of the dry seasoning if it is a bit too spicy.


Here's another quick recipe:

Quick Chicken and dumplings


1 roasted chicken you can usually get from a supermarket or Wal-Mart for about 4 bucks.

1 15 oz can of chicken broth

1 can biscuits

3 tsp corn starch


Get the chicken and take all the meat off of it.

Take 3/4 cup of the chicken broth and heat it up in a microwave (about 1 minute or the beverage cycle).

Pour rest of chicken broth in a large 6 qt pot. Heat on low to medium.

add corn starch to the heated chicken broth and stir well. Set aside to thicken.

Add chicken meat to the pot with simmering chicken broth. Salt and pepper to taste.

Stir in chicken broth/corn starch thickening agent.

When this is all simmering again, open the can of bisquits and tear
biscuits in half, and cover chicken in the pot. Try to make sure all
the liquid is covered.

Reduce to low and cook about 10 minutes or until "dumplings" are
done.

Add a salad and you have a quick, hearty meal.
 

We had a gas grill and used that a lot. The first night we were in our rental we were in a rush. I made pasta and nuked frozen shrimp scampi which we tossed together with parmasean. Unfortunately, I slashed my index finger when I was opening the bagged Caesar salad, so don't forget the band-aids!

My family and I loved this:woohoo: , not too buttery for us and the seasoning was great, I added a crushed clove of garlic, dried parsley, and some chopped onion to the seasoining mix and bacon pieces on top of the beans and potatos. My 8yr ds asked if this was a home cooked meal from scratch:eek: The poor boy doesn't see meals from scratch often (box, frozen):sad2: This one will go in the master cook book, we really loved it:yay: Thanks so much for sharing. I love this thread:hippie: We will be staying at a resort (Bonnet Creek) during our next visit. It will be nice to have recipes in hand because that =:teacher: grocery shopping list. I always manage to forget something :scared: if I don't have a list.:thumbsup2
 
Just thought I'd bump this up since I only have 2 weeks left and a few meals to fill in. :goodvibes Actually, I had burgers down for one of my nights, but realized my kids are such sauce people that I didn't want to buy all the condiments we'd need. I suppose I could start hoarding ketchup packets now to bring along. LOL
 
All these sound wonderful. Don't forget the Deli counter at the store. I know there is one at the Publix and usually Walmart too. We aways get some pre cooked meals to bring back with us to eat.

I have a place at the lake that we are at almost every summer weekend. Here are some things I have used that help. We stop on the way in and grocery shop. I find it easier than bringing it all down with me. I use a lot more packaged products than I would at home.

We like the banquet crock pot meals. So easy to put in the crock pot in the am and come off the lake (or in your case out of the parks) and eat.

I use the frozen chicken strips and bagged salad. We add some strawberry's too. Makes a great salad.

We use the taco kits as well as pasta sauce in the jar. And frozen garlic bread.

Throw away pans are a great idea. I don't think I could get away with that one at the lake but at Disney go for it!

Try to fix things that both your family will enjoy AND that you won't feel like you need a vacation from your vacation. If they are out by the pool and you are cooking a big meal you are not going to feel like you have had anytime away. ;) As long as the meal and clean-up are easy I would rather eat in after a long day than have to go out to eat. Saving money is a bonus too!:)
 
I rarely MAKE dinner while on vaca even though we almost always have a kitchen. We definitely use it for breakfast and snaks. We also normally have a dinner of leftovers/doggie bags that we reheat. Drinks and snaks are our main budget breaker reason for having a frig and microwave.
