what do you bring to a potluck?

We have 2 potluck dinners to go to this week...one at church and one a baby shower...my mind can't think of anything to bring...

just wonderin' what your favorite thing to bring to a potluck is...might give me some ideas...

a big pot of beef stew, a roasted chicken ( made like a pot roast just roast bird instead of pig) if you prefer desert do a peach cobbler or a pan of brownies, ( please dont just go through a drive through and bring a box of fried chicken:) )
 
I've been told that I make fabulous salads, so that is usually what I do. I don't follow any specific recipe, and they all start out with prebagged greens, sometimes a mix, sometimes spinach, whatever. I add a vegetable or two, mostly onions and tomatoes, and some fruit and almonds or pecans, followed by a light bottled dressing, like a lite Italian or a vinaigrette. I also usually add a cheese, something grated, and of course croutons.

Or if I am not going to be on time, desserts. Brownies, cookies, cakes..what have you.
 
thanks for some of your replies.....

I have a hereditary problem however...my Mom was a "stay-at-home" and home made everything home baked and special and I inherited that trait even though I am hardly ever home...I always feel the need to bring the dish that everyone will be saying..."did you get any of ....its great " or how pretty etc...

I always bring Ribbon Jell-o! It looks like you spent so long making it, but it is so easy and usually a HUGE hit! You can start making it a day or two before the event and just add another layer as you have time!

Here is the recipe:

Ribbon Jell-O

Ingredients:

· 2 cans evaporated milk
· 2 boxes (4–serving) Black Cherry Jell-O
· 2 boxes (4–serving) Lime Jell-O
· 2 boxes (4–serving) Lemon Jell-O
· 2 boxes (4–serving) Orange Jell-O
· 1 box (4–serving) Cherry Jell-O

Directions:

1. Dissolve one box of Black Cherry Jell-O in one cup of boiling water. Stir for about one minute. Add ½ cup of cold water and stir for another minute. Pour into a 13x9 inch pan and refrigerate for 45 minutes to an hour (Longer if you want to!)
2. For the next layer, dissolve one box of Black Cherry Jell-O in one cup of boiling water. Stir for about one minute. Add ½ cup of cold evaporated milk and stir for another minute. Pour into 13x9 inch pan (over the last layer) and refrigerate for 45 minutes to an hour (Longer if you want to!)
3. Repeat steps one and two for each layer of Jell-O ending with one layer of Cherry.
4. Let the whole thing set for a couple of hours before serving.
 
Hash Brown Casserole

2lbs hash brown potatoes, thawed
1 (10 oz) package shredded cheddar
1/4 c butter melted
1/4 tsp pepper
1 tsp salt
1 pt sour cream

Combine all ingredients. Place in baking dish. Back, uncovered, at 375º for 45 minutes.

Now that I've made this a few times I do not always follow the recipe to a T. Sometimes I add in a little Michigan Cottage Cheese or more cheddar or a few bacon bits.

If I need to bring a dessert I make either chocolate chip cookies or Texas Sheet Cake. For an appetizer I make a Mexican layer dip. Depending on what I have on hand: Refried beans, guacamole, sour cream, tomatos, gr. onions, black olives and cheddar or Mexican cheese.
 
I like to bring the cool veggie pizza recipe from Pampered Chef. It's really easy to make and it's always a hit. All of the PC recipes are great for parties - easy, cheap to make, and tasty!

I love when other people bring cheesy potatoes (wish I had a good recipe) it really feels like a pot luck party with cheesy potatoes!
 
If you want to bring a dessert, make a family-sized box of Pillsbury fudge brownies, adding a cup of chopped pecans to the mix.

They get oo'ed-and-ah'ed over whenever I bring them to a pot luck.

If I have to bring an appetizer, I like to make vegetable/spinach dip. Buy Lipton's dry vegetable soup and dip mix, and follow the package directions. If you can, get a big round loaf of bread, and hollow it out to put the prepared dip in. Fill it when you get to the event, though, so it doesn't too mushy.

Cube the bread you needed to cut out of the loaf to hollow it and serve it for dipping, along with raw baby carrots, celery sticks, grape tomatoes and cucumber slices.
 
I always bring Sprite and Pop Rocks. Hey come to think about it, I have not been getting any more invitations to Potluck dinners.

In Utah those are called funeral potatoes since they are served at about every funeral dinner you ever attend. I have a good recipe for those (well Trina has a good recipe for those I am more of the official food taster) if you want it.


Oh and I have an important safety tip. Do NOT hold your nose while you eat a package of Pop Rocks and guzzle a Sprite. I think it will make your ear drums explode and those rocks are hard to snort out your nose if you are holding it closed.

If I am in a hurry, I bring a big pan of ravioli lasagna and garlic bread. It is the quickest thing to make and it can be made the day before as sitting in the fridge overnight is just fine.

1 24 oz. package frozen ravioli
1 jar marinara sauce (I like Classico tomato & basil)
12 oz. mozzarella cheese, shredded
1 package frozen chopped spinach, thawed and squeezed dry
3 T. grated parmesan cheese

Spread a thin layer of sauce in the bottom of a 13x9 pan. Arrange
half the ravioli in the pan. Dot with half the spinach. Sprinkle with
half the cheese. Spread half the remaining sauce on top. Repeat
layers. Sprinkle the top with Parmesan cheese.

Bake at 375ºF for an hour, until bubbly.

I like more sauce so I usually use a jar and a half or sometimes two. I also use the cheese ravioli and sometimes leave the spinach out and sometimes not. If I have more time I use homemade ravioli and sauce.
 
I attend a lot of potlucks and some of the things I bring that go over well are sausage and peppers, Dorito Salad, broccoli salad, Caprese salad or some sort of baked good.
 
Chicken Pot Pie from the Campbells soup and Bisquick mix, or corn pudding (yum!) is what we always bring.

I always try to find something different from the norm. I like to take a crock pot full of sausage & meatballs, with a good, hard Italian bread for dipping. It's something that I never see others bring, but is a hit every time.

When I don't have time to do the meatballs from scratch, I've used the ones you can buy at Costco....they're pretty good to start with, but I doubt anyone would know they weren't your own because of the sauce.

You don't want to use large meatballs though...the flavor of the sauce doesn't penetrate well enough.

Company Sausage & Meatballs
2 lb hamburger
½ c Parmesan cheese
¼ c bread crumbs
½ tsp garlic powder
dash pepper
1 c oatmeal
2 eggs
1 tsp salt
½ tsp oregano
30 Jimmy Dean links, skinless
32 oz catsup
¼ c brown sugar
1 tsp oregano
1 tsp mustard
¾ c BBQ sauce
½ c cider vinegar
1½ tsp garlic powder
2 tsp Worcestershire sauce
garlic, minced (opt)
onion, chopped (opt)

Combine hamburger, cheese, crumbs, garlic powder, pepper, oatmeal, eggs, ½ tsp oregano & salt. Use a melon baller to form into meatballs. Microwave meatballs on HIGH ~ 20 at a time – cover with wax paper. Repeat with sausages ~10 at a time. Combine remaining ingredients & simmer with sausage & meatballs 6 hours. Serve with noodles, rice or good bread. Yield: 60+ meatballs & 30 sausages
 
I love potlucks!!

Here's one I like:
BQ Chicken casserole- cut up skinned chicken, small red potatoes,
carrots, grn pepper, onions, baby brussel sprouts - covered with a jar of BQ sauce and cook covered @325 appx. 1 hr. I always bring the dish home empty cause people say it's yummy! ;)

I love to make and bring supper easy eggplant parm. I peel the eggplant slice them thin and layer them with fav jar sauce on bottom layer of eggplant a layer of grated cheese/parm cheese layer of sauce layer of eggplant until all is in the pan and add a final layer of sauce and cheese back covered for 1 or so hours remove cover and add more cheese to brown up and cover up the pan and take to the pot luck. It is a proven winner and even makes the vegitarians happy.
