what do u all serve for easter dinner?

I was thinking maybe raost beef...but my husbands family only eats meat that is well done (they will not eat anything pink) and isnt roast beef usually served a little pink? Thanks

Doesn't have to be. I won't eat any pink either and I cook my pot roast in the crock pot so it's cooked ALL the way through, but still very tender!

I have to work later in the day this year so we are keeping it simple. The kids will probably have larger meals in the evening at their inlaws. So, we are having sandwich trays, veggie trays, deviled eggs, potato salad and some type of desert. That way, I have minimal clean up and dh and the teens can snack all afternoon if they want. My kitchen stays clean too!
