What did you bake today ? OK if not from scratch

It's basic Vanilla Pudding - thespruceeats.com

We don't use the vanilla pudding box. Scroll down to the cornstarch recipe.

3 cups milk, divided
1/4 cup cornstarch
1/2 cup granulated sugar
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract

Scald 2 2/3 cups of milk. In a small bowl, mix together the cornstarch, sugar and salt. Stir in the remaining 1/3 cup of milk. Add to the scalded milk and cook one low heat, constantly stirring, until thickened and smooth. (should not be lumpy). Continue cooking for about 5 minutes to cook cornstarch thoroughly. Cool lightly and stir in vanilla.

You can pour into serving dishes/small individual bowls or cups. You can sprinkle some cinnamon or sprinkles. Eat warm or cold.

What we do is pour a small layer of pudding. Then we place Pavesini cookies that were dunked in espresso (or similar cookie/Stella D'Oro) or even tea beascuit cookies (they are a bit thin) - on top. Make another layer of pudding and so on. Depending on the size of the plate you use. We make one or two layers. Same as above - sprinkle some cinnamon. You can add some shredded chocolate too if you like. We like to let it set in the refrigerator for a few hours.

Prepare the coffee earlier/anytime/refrigerate. It should not take more than 25 minutes or so.

You are welcome. We grew up on this. My mom made it all the time but never followed a recipe of course. I could never get the right consistency until I followed the recipe I found. I think Argo cornstarch has a recipe too. Everyone loves it. Good luck and enjoy if you decide to try it.

I love it too. My grandparents were from Spain. They've been gone a long time and I have been missing my Grandma's cooking. I can attest that Spain on a Fork recipes taste just like my Grandma's food! He makes them really easy to follow too.

Just pulled (big sandwich) out of the oven. DGD and I made it together. She is taking it home for her lunches this week.

We made the dough and then it is covered in ham, salami and mozzarella, garlic olive oil . Folded over (like a calzone) and sealed. Topped with more garlic olive oil.
 
Bacalao was my grandma's specialty!

There are lots of dishes on that website that taste so close to her recipes.
I have 18th century ancestors from Spain but I know very little about them. The channel helps me feel a connection to the country.

No, but she taught my mom all her dishes and my mom taught me many of them.

Today I made a Spanish Tortilla which is not like the tortilla we know in the US and Mexico. It''s basically a potato and egg omelette. I make it on the weekends.
