What can you do with fresh mint?

besides make tabouli and mint jelly?

There was a small patch of mint in the area where my hubby put his garden when we moved in. He has hacked and chopped at it to try to contain it, but it is getting out of control.

Anyone have any recipes for what we can do with it?
 
I like to drop about 7 leaves in a glass with some Splendia I then crush the mint with a spoon. I squeeze the juice of half a lime into the glass with the lime. Then fill with ice, a shot of light rum & finish it off with Lime flavored seltzer.

I call this my Skinny Girl Mojito.
 
Make Mojitos!!!

Ice
6 ounces light rum
12 mint sprigs, or spearmint, 8 roughly broken apart
6 tablespoons fresh lime juice
4 tablespoons sugar
Club soda
4 slices lime
Directions
Place ice in beverage shaker then add in the rum, 8 broken up mint sprigs, lime juice and sugar. Shake well and serve over ice in a high ball glass. Top off each glass with a splash of club soda.

Garnish each with a slice of lime and a sprig of mint.
 
I just saw on Paula Deen today that you can dip it in melted chocolate and let it harden.
 

Yummy mojitos! That's the best summer drink.

If you don't drink alcohol, you could muddle it with sugar and put it in iced tea.

You could also crush it up, or chop it real fine and make a minty lamb. A friend of mine just taught me to make it and it was delicious. I could ask her for the exact recipe if you want. It's Indian inspired.
 
My first thought was also mojitos:goodvibes

A sprig of mint is good in iced tea or lemonade as well.

Chop it up and mix it with fresh strawberries.

Also makes a good tomato salad mixed with deep red tomatoes and a bit of olive oil.

If you don't have a beverage shaker, you can just muddle the sugar and mint in the bottom of your glass with the back of a spoon.

I have a patch of mint growing just off of the deck near our kitchen for quick, fresh mint for mojitos! :thumbsup2

It does go crazy... give some to a neighbor!
 
This is going to sound weird, but we put them on our potatoes. We got the recipe from a Jamie Oliver cookbook.

It's basically boiled baby potatoes, 2 finely chopped mint leaves, a squeeze of lemon juice, a table spoon of butter, then salt and pepper. It's delicious.

Sounds yummy---I will have to try that!

I also forgot we make carrots with mint, brown sugar and butter.

Or the classic mint recipe: Tabouli. I find different recipes online every time I make it but it is basically a salad with bulgar or cous cous, mint, parsley and tomatoes and a lemon juice and olive oil dressing. I think the other spices are generally just garlic salt and pepper and sometimes we add cucumber and/or green onions. Just google it and pick a recipe that looks good.
 
You can make an herb salsa with it~ it's not really a "salsa", but you can chop together fresh mint, fresh parsley, and fresh basil with some freshly chopped garlic, salt, pepper and olive oil and use it on grilled steak, fish, chicken, spreads for sandwiches such as tomato and fresh mozzarella. It's really yummy and you can find other creative ways to use it.
 
Fresh peas with finely chopped mint, and butter. Mint sauce--same concept as mint jelly, but in sauce format. You can also make a mint - jalapeno jelly, very yummy.
