What better to do on a snow day..easiest fudge ever!

Happy Holidays to all my DIS friends..just had to share this Rachel Ray (from Food Network) recipe for 5 minute Fudge...just made it..and it is even easier than the marshmallow fluff fudge I usually make..and takes less ingredients..enjoy!
INGREDIENTS
 12 ounce package semisweet chocolate chips
 1 cup butterscotch chips
 14 ounce can sweetened condensed milk (save the can)
 1 teaspoon pure vanilla extract
 8 ounce can walnuts, plus more for topping
 1/2 cup raisins or dried currants (a couple of handfuls)
 candied red and green cherries to decorate top (like holly)
 softened butter to grease an 8 inch round cake pan
1. Grease an 8-inch round cake pan with softened butter. Pour the chocolate and butterscotch chips, condensed milk and vanilla into a medium saucepan. Put the pan on the stove and turn the heat to low.
2. Cover the empty condensed milk can with plastic wrap and put it in the center of the round cake pan.
3. Stir the chips and milk until they melt together, about 3 minutes. Stir in nuts and raisins. Scoop the fudge into the cake pan all around the plastic-covered can in the center to form a wreath or ring shape. Let it be all bumpy on top. Keep pushing the can back to the center if the fudge moves it away from there. Cut the red cherries in half with scissors and the green cherries into quarters. Use the green pieces to make leaves and the red to make holly berries. Decorate the fudge with several groups of holly berry sprigs made from the cherries and garnish with walnuts between the sprigs.
4. Put the fudge in the fridge and chill until firm. Remove the can from the center, then loosen the sides and bottom of the fudge with a spatula. Cut the fudge into thin slices to serve.
To give the wreath as a gift-wrap in cellophane and secure with a bow or ornament.

Variations:
White Chocolate Wreath with Pistachio
and Cranberry
 Substitute the chocolate chips with white chocolate chips, 1 1/2 ounce bag plus 1 cup.
 Substitute 1 to 1 1/2 cups of shelled natural pistachio nuts for walnuts.
 Substitute 1/2 cup dried sweetened cranberries for currants.
Goober and Raisinette Wreath
 Swap butterscotch for peanut butter chips
 Swap large whole peanuts for walnuts used in original recipe (such as peeled Virginia Peanuts)
 Swap 1/2 cup large raisins for currants in original recipe
 
I have a much easier one that is just the semi sweet Choc chips, the can of sweetened condensed milk, salt and vanilla! So quick and easy and always a hit. It's on the back of the can of Eagle brand fat free sweetened condensed milk. Or here! http://www.eaglebrand.com/detail.asp?rid=1274 Yours sounds much prettier though! :)


ETA actual recipe, I use only Ghiradelli Choc chips. :)

3 cups (18 ounces) semi-sweet chocolate chips
1 (14-ounce) can EAGLE BRAND® Fat Free Sweetened Condensed Milk
Dash salt
1 1/2 teaspoons vanilla extract
Instructions
In heavy saucepan, over low heat, melt chocolate chips with EAGLE BRAND® and salt. Remove from heat; stir in vanilla. Spread evenly into wax paper lined 8- or 9-inch square pan.
Chill 2 hours or until firm. Turn fudge onto cutting board; peel off paper and cut into squares. Store leftovers covered in the refrigerator.
 
That is our favorite. I make it every year and it's super easy.
 
I use the no-bake fudge recipe on the box of baker's semi-sweet chips and it's even easier. It's just chocolate, eagle brand milk, walnuts and vanilla. I don't like to tell people how easy it is because they think I slaved over it, but I'll tell you guys (this is from memory--there are variations on the baker's box)
2 boxes baker's semi-sweet chocolate
1 cup walnuts
1 can eagle brand sweetened condensed milk
2 tsp. vanilla

put the chocolate squares and the condensed milk in a bowl and microwave for 2 1/2-3 minutes, stirring halfway through. At the end of the microwave time stir until completely melted. Add walnuts and vanilla and stir in. Put in a foil-lined 8 x 8 pan and put in the fridge until it's hardened!
I have been looking at cookbooks recently because I'm toying with learning to cook better. I love "easy" recipes, but when I see Rachel Ray's "easy" recipes, they don't seem easy or 5 minute at all!

Ahhhh! Racel Ray's easy fudge, very good and easy to make. Always a hit at our house.
 
Here is another quick fudge recipe:

1 bag of chocolate chips
1 box of mint or cherry Andes Candies, unwrapped and broken
1 can sweentened condensed milk

Put all in the microwave until smooth. Pour into a 8x8 pan line w/ foil and put in the fridge for about 4 hours.

This is always a big hit at work and people seem to think I slave over it!

I have also used 2 bags of chocolate chips & chopped walnuts.

Here's my Nestle's Fudge recipe. It's a BIG favorite in my family and SO easy to make!

Ingredients:
2 T of margarine
2/3rd c. of Carnation evaporated milk
1 1/2 c of sugar
1/4 tsp of salt
2 cups of miniature marshmellows
1 1/2 cups of Nestle's choc chip (semi sweet)
1 tsp vanilla

Combine the butter, milk, sugar and salt in heavy saucepan. Bring to a boil over medium heat. Stirring constantly boil 4-5 minutes.
Remove from heat.
Quickly stir in marshmellows, chips and vanilla. Stir vigorously for 1 minute or until all ingredients are melted.
Pour into wax lined 8-in pan
Chill for about an hour.
EAT and ENJOY :)
