What are the following relationships called?

Me to my cousin's children

My children to my cousin's children

My children to my Uncle/Aunt

Me to my cousin's cousins on the other side of the family

Also, where do "once removed" folks fit in?

I think it goes like this:

You to your cousin's children are your first cousins once removed

Your children to your cousin's children, they are second cousins

That's about all I know, and I'm not even sure if that's right!!

I don't know, but maybe they go together? You're not related by blood. This sounds awful. I once had two cousins dating eachother. They were MY cousins, not cousins to eachother. The guy was my Dad's brother's son and the other was my mom's sister's daughter. Once they realized the connection, they broke it off, even though there was not realy any need, it just seemed weird. :D

1. First cousins once removed

2. Second cousins

3. great (or grand) nieces/great nephews

4. no relation

Once removed is the children of whatever...your cousins children are once-removed from you.
 

Yep, what everyone else said, 2nd cousin, third cousin, great neice/nephew and you are not related to your cousins, cousins - you call them your cousin's cousins ;)

My college roommate was my first cousin and we are quite close. So even though his kids are my first cousin's once removed, they refer to me and DW as their uncle and aunt and my kids as their cousins (without the "second"). I guess it's mostly a thing of generational reference or respect.
