What’s for Dinner Tonight?

Went to see 349 manatees in Blue Springs State park today (at least that’s how many they said were there). It was quite a sight! We had dinner at Three Bridges. We shared the trio of dips, signature burger and villa del lago salad. Everything was very good except the salad was salty?? I’ve never had a salty salad before.

We are staying at Gran Destino tower this summer so looking forward to trying 3 Bridges.

Chicken Roll ups (copycat from Applebees), pico de gallo and dipping sauce, green salad

I'm making a copycat recipe of Carrabba's chicken bryan. Sautéed boneless chicken breasts topped with goat cheese and sun-dried tomatoes. Finished with a light lemon sauce. I'll do either asparagus or broccoli on the side and probably skip any starch.

Pretty simple again this week for me, since Hubs is on the road again. Had half a Jersey Mike’s sandwich for lunch, then ate the other half for dinner last night with a strawberry yogurt for dessert.

Tonight I’m going to bake a purple potato & grill a sirloin burger. Will probably have a side salad too.

Need to make a grocery run sometime soon - not much for food left in the house after getting home late Monday night from Florida. Probably just grabbing something on the way home from work tonight.

We got another 3 inches of snow this morning so I wfh again today. I’m hoping to make it into the office tomorrow. I’m also going to need to go to the grocery store we are low on fresh veggies. I’ve been avoiding the grocery store due to all the storm madness.

Tonight I made chicken stuffed with cheddar and broccoli (prepped by our local butcher), scallop potatoes, and roasted asparagus.

We've been to Blue Spring State park to see the manatees, too (a couple years ago). They are awesome, but I was surprised that it was so noisy! They float along, calmly and majestically, but when the surface there is a huge whoosh of air as they blow it out. Didn't expect that!

No idea on tonight. We traveled Saturday-Tuesday night for a funeral/celebration. Saturday supper was mac and cheese w/salad at BWI, Sunday was grazing on pub grub at the celebration (So Much fried stuff, I peel the fry off and ate mushrooms, chicken strips or shreds of chicken strips, some turkey and cheese from inside a sandwich... nothing very healthy or satisfying, but it kept me fed), Monday we had a late lunch/early supper at Ruby Tuesday (I had coconut shrimp), and last night we grabbed McD's around 8pm while driving home (just the burgers from a double cheeseburger and 8 fries). I haven't even thought about tonight, it's after 7pm and we are still at work, so I'm gonna guess it'll be take out (probably Thai again).
