Theirs wasn't open, either. They were training on new software they're installing. They worked from 8-5, however, they were given the option to stay later as the new program didn't upload until 4:30. DW and her boss were the only ones to stay late, and she worked until 7:30. They gave them the option of holiday pay or an extra paid day off that had to be taken within 90 days. However, February is completely blacked out because that's when the new system will going live. So she opted for the holiday pay in addition to her regular pay. So she basically worked 21 hours today.
Went to one of our favorite seafood joints and had late Happy Hour for dinner last night. I had a glass of Chardonnay, Hubs had an IPA. We shared the smoked tuna dip. Need a bit more so I got the arugula salad and hubby got the Caesar. Crisp and clear on the beach!
I was supposed to have the other portion of lasagna last night - BUT we had stuffed shells at the Friendship Club yesterday.for lunch..So no pasta again - last night hot dog, salad and sweet potato. Crazy combination.
Thought I would finish it tonite, BUT tonite going to the diner with the bereavement ladies. Hopefully the lasagna will still be good for tomorrow night????
We had barbecue for lunch and are going to Moonlight Magic at AK tonight, so I think I will just have an open face turkey sandwich for me.....looking forward to some snacks there....like a Mickey bar
Had a 1/2 of a grilled pepper Jack sandwich and a bowl of spicy black bean soup for “lupper”. Like others, I’d forgotten that the cheese drawer needed emptying .
Came here for dinner ideas. Was out of town this weekend, so did not grocery shop s costco was closed yesterday. Hoping my teenage sons left some chicken nuggets as that's sounding good right now.
Last night we had chicken soup that I'd started on Saturday. Tonight, I strained the veg out of the soup (there's no meat in the soup, those who want chicken add it to their own bowl) and pureed about 2/3 of it back into the broth, thickened it just a tad, then added the rest of the cooked veg and some garam masala to the soup. I simmered some pumpkin ravioli from TJ's in the soup, and we had that with greens and bread. It was pretty good.
Yesterday I made yet another time consuming recipe from the Skinnytaste High Protein cookbook, Roasted Autumn Veggie Frittata. It was quite good. This one is almost worth the effort. We had the rest tonight for dinner with green beans.
I made some honey mustard chicken bites, rice, and air fried veggies last night. Will eat the leftovers the next couple of days. It was pretty good even though I slightly burned the chicken coating. I may make a couple tweaks (more honey, less mustard, more garlic), but I think it is a keeper. Super easy to make, flavorful, and very filling.
