What’s for Dinner Tonight?

It was my first day back in the office. I’m ready for the weekend.

Chicken stuffed with broccoli and cheddar (from the butcher) with mashed potatoes, and green beans.

I feel your pain today was much harder to get up than yesterday!

Dug into the freezer and found eggplant rollatini and jumbo shells stuffed with spinach ricotta.
Heated and ate the eggplant last night while the stuffed shells are for tonight with sweet sausage.
Will probably serve a butter leaf, tomato and onion salad on the side.

Cleaning the top shelf of the fridge found a flan leftover from NYE so I’ll eat it this evening after topping w/ sugar to make a crème brûlée.
Can only imagine what I’ll find on the other shelves, lol.

Took leftover turkey out of the freezer. This is the end of the Christmas turkey.

I received the latest Skinnytaste High Protein cookbook for Christmas and I'm loosely following her week 1 High Protein meal plan this week to help us get back on track. Tonight's meal is her One Pot Fiesta Chicken & Rice (think Chipotle-bowl). So far we've liked everything we've tried: Sunday Pot Roast, Egg white cottage cheese muffins, Lentil Chili, Sheetpan Breakfast, and Chicken Avocado Salad.

I just made a Tuscan Parmesan Spinach and Bean soup. It is basically ground beef, celery, carrots, onions, spinach and great northern beans along with some canned tomatoes and Parmesan. Icy and snowy here today so it felt like a soup day.

I’m in the use it or lose it mode with my outdoor freezer. I took out a turkey breast to thaw & I’m now roasting it. I’ll make that into a chopped salad for dinner.

Tonight I’m making chicken Cesar wraps with tator tots. It will be quick and easy. I’m fighting something and not feeling great.

Tonight is YOYO night. We both have bible study at 6 then choir practice from 7-8:15. So it's Your On Your Own night at our house. I'll probably do a PB&J sandwich cause it's light, and it'll be nearly 9 by the time we eat. Not sure what DW will do.

I'm glad I decided on something else.....it's been a busy day. Trip to Sam's and then packaging things for the freezer.
And then cleaning out the pantry and the herb/spice cupboard. That has taken a long time.
I still need to finish it tomorrow.
