What’s for Dinner Tonight?

My day’s plan went completely off kilter.
Was supposed to return some clothing in the Grand Central Station area but got on the train before realizing we hadn’t the shopping bag 🤷🏾‍♀️.

So looked for a needed belt instead. Err but wound up buying other stuff instead. Too silly ish.

Ate lunch at a Thai restaurant and called that dinner too. I had coconut chicken and veggies soup and lots of leftovers that I brought home.
 

I am making Italian seasoned baked chicken breasts, roasted potatoes and some sort of veggie. My husband works till late so I'll make it to be ready when he gets home.

I had my Lobster bisque from yesterday's trip to Cousin's Maine Lobster for a late lunch. It was yummy.
 
Saturday, we went to a sports bar to watch our football team. We started with a very good Ahi Tuna appetizer. That filled me up, so DH ordered a less than stellar burger w/fries.

Sunday night DH wanted to go to an oyster bar. We shared a 1/2 dozen oysters, a dozen clams (which were great) & a really odd Pâté dish. It was raining, so we wanted to finish with something hot. The only hot dish was soup, but they were out. The hotel restaurant closed early, so no hot food from there either. When we got to the room, DH decided that pizza sounded good. We ordered one via DoorDash & had a pig out night.

Monday, we had Taco Bell Mexican pizzas + a taco for DH.

Last night we had a Pu Pu platter & lo mein.

Tonight was fried green tomatoes & shrimp & grits.

We went to bff’s for football and her husband’s birthday. We had wings, flatbread, jalapeños poppers, Caesar cups, Brie, chips and dip, and banana cream pie (birthday boy pick).
How do you make the Caesar cups? I'm sure DH would love them, but I keep forgetting to ask how to make them.

They are really easy to make.

I take 12 pieces of bread, cut the crusts off and roll flat with a rolling pin.

Melt a half stick of butter, add 1 tablespoon Italian herbs and I clove of garlic, I mince it on a micro plane.

Brush both sides of bread with butter

Place the bread into a cupcake pan to make cups.

Bake 350 for 10-12 minutes. You want it to be lightly brown

Remove from pan and let cool on a cooling rack, they will crisp when they cool.

Mix a bowl of Romain with Cesar dressing.

Fill the cooked cups with the Cesar salad and sprinkle with parm cheese.

I have found that white bread works best, and a brand like wonder, you want to be able to squish it flat when you roll it out and higher quality bread doesn’t do this well. I have tried lots of kinds of bread lol.

I shaved some parm on the ones below with my veggie peeler.

My turn to cook -- cheese ravioli with marinara sauce and Italian sausage; corn on the cob from Sam's Club. My daughter teaches on our local air force base and cannot get home because the base is locked down. Hopefully she'll make it home by the time dinner is ready.

Thanks for the recipe. I may make these for one of my contributions to our extended family Thanksgiving meal. Will they travel well? (The drive is about an hour.)
