What’s for Dinner Tonight?

Today was DGD’s saint day, which she’d no clue was a day worthy of gifts until recently, lol.
We spent the day together and then she went back to school this evening.

In her honor made meatballs and spaghetti, a green salad and a pear tart.
 
1 large meatloaf in the fridge, 3 small ones in the freezer. honey baked ham leftovers from the freezer have been prepped for eating (slice pieces), dibs and dabs and ham bones are at the ready for me to prep veg/soak split peas and make soup Tuesday. I haven't batch cooked in a long time-it takes me back to when dh and were both commuting to work and the kids were little. I used to pick a different dish every weekend to batch cook so we had easy to pull, defrost and heat meals during the work week (I had co-workers who could NOT fathom anyone cooking a turkey any other day of the year other than thanksgiving-it was in regular rotation at our house b/c it was so freaking easy and economical).
 
I love the convenience of the crockpot but often find the food bland. I don’t eat beef but would take any suggestions for non beef meals you make in your crockpot. Thanks!

I use Virgil's root beer or apple cider and sub 1 t. or less of Sriracha for the chipotles. Another recipe that works like a charm every time!

Thank you! I eat some pork (bacon and pulled pork are on the list) I’m excited to try these. I bought a pork butt at the farmers market last week.

Love Skinnytaste recipes as well. I need to get back to using them more often. I have all the cookbooks, including the new high protein one.

Tonight though I am making chicken taco salad bowls.

the Yummly site has a wealth of tasty crockpot recipes that don't use beef. there's also the option of using some other ground meat (like pork) as a substitution for those that call for beef. there's a couple of great soup recipes there that you could substitute out the ground beef for ground sausage on-the stuffed bell pepper soup and the lasagna soup. I do up pork (butt or shoulder-whatever is on the best sale) in the crockpot using the soda method (put the roast in, pour a can of dark soda-let cook till shreddable), pull the roast and then shred it to put up in containers to season when i'm making a particular dish like pulled pork sandwiches or enchiladas (some seasoning and the appropriate sauce helps with the flavoring).
