What’s for Dinner Tonight?

I didn’t think to plan for dinner while not being able to eat. I’m also super tired, I had about 45 minutes of sleep last night. DH offered to pick up Chinese. I’m having shrimp fried rice.

tues/thurs I teach night classes, so dinner is usually something easy I can grab on the way home

Leftover Mexican from yesterday’s restaurant visit. Great weekend in NH with our sons. Now on our way back home.

DH wasn't going to teach very long tonight, so I was expecting we were going to trivia at 6:30 and having supper there. At 7:15 I started dicing up some peppers, onion, and bacon so when he got home at 7:30 I threw together some cheese/veg omelets and put a pan of crescent rolls in the oven.

Hubby is at a hockey game tonight. So I’m throwing together a chicken bowl for myself tonight.

Last night was leftover burger with chips for DH, I had honey chicken nuggets and sweet potato fries.
Tonight was buttered chicken and creamy chicken noodles.

DS is driving us to the airport early in the morning. We have so many leftovers that I didn't want to leave more than he could eat in a timely fashion. It didn't help that DH & I met a couple of my sisters for lunch today & had leftovers from that meal.

DS had leftover baked ravioli that he didn't end up eating a couple nights ago w/ some Texas Toast. DH had the rest of his BBQ Brisket sandwich from earlier today. He'll be going back for more leftovers later. I had the other half of my turkey club. I also made a salad for all of us to have something fresh to start the meal.

Cooked up a Blue Apron meal kit last night - chili crisp salmon with bok choy rice. Pretty good.

beef stroganoff and fresh asparagus. weather has turned chilly and it sounds comforting.

got the last of the garden items frozen up so I'm keeping an eye out for sales on the few meat items i want before winter hits (won't hit our place but we may see snow on our mountain view by the weekend).

Hubs is supposed to be taking me out for lunch in a little bit, so not sure if dinner will be a big deal tonight.

Navy son is coming home Friday, so I need to stock up tomorrow. He eats like a wood chipper!!!

Last night was California turkey scallopini, tonight is leftover Bison vegetable soup and grilled cheese

Tonight I took some chicken breasts, pounded them thin then stuffed with stuffing then rolled and coated the outside with some bread crumbs and baked. I served it with rice pilaf and corn on the cob. We are expecting a freeze tomorrow so it’s probably the last corn of the season.

I've got some sole fillets in the fridge that need to be used - I'll pan-fry them lightly and finish with lemon and butter. I'll throw together my favorite rice pilaf (it's a boxed mix) for a side and serve with some frozen peas and the last of the tomatoes from my patio plant. There's a dozen or so on there and they'll be touched by frost any night now.
