What’s for Dinner Tonight?

Speaking of pasta… we’re having spaghetti and meatballs tonight. I needed something easy after the day I had.

Sorry about that! Doctor’s appt got in the way.


Sunday we took Metro North to 125th Street to checkout some shops. Vintage clothing for her and Sephora for me. Had a meal of fried chicken and waffles with a side of collard greens. No room for dessert but we drank a few Aperol spritzers when we returned to my home.

No idea what’s for dinner. It’s up to Air France and let’s hope they treat me well. I’ll be gone for a bit but not sure how long as my ticket return date is open.

I want the noodle "feel" and the layering to work

Have you ever tried making it with deli turkey slices as the noodles? Don't get smoked, just plain old roasted. Or chicken, but I think turkey is actually more neutral in taste. Or, egg "noodles"... just eggs made as thin crepes, or eggs & plain protein powder, or eggs and mozzarella cooked in thin sheets.

I’ve used the ones from Trader Joe’s. Didn’t like them! Weird texture. I’d rather take the carbs and eat real pasta.

For me it's not a choice....no real pasta.
I hope I like it better than zucchini because I don't like that. We have been using edamame noodles, but I haven't found lasagna noodles.

I have had a Real Good bowl with chicken as a base....also pizza.
I use ground chicken in the sauce, so we'll see how it goes.
I would be fine with just the sauce and the cheeses

My friend had a beautiful picnic for our girlfriend group this afternoon and snapped this picture before we all arrived. We didn’t get a picture of all the food everyone brought, because we were all hungry and dove in! Hahaha. These ladies can cook and my heart is full from our conversations.

I LOVE bison! there's a restaurant near us and it's always a struggle to decide between their wonderful bison meatloaf or elk salisbury steak (if I opt for the meatloaf I comfort myself with the elk meatball appetizer ).

Hubby followed directions and made the pasta and meat sauce I had prepped in the fridge. Also steamed some green beans. He didn’t make a salad, but I’ll take what I can get! Happy Monday!
