Enjoyed a nice long weekend. Dinner selections were:
Saturday was at a friends house celebrating a birthday, so that meant grilled ribeye's, corn on the cob, home made fried rice, scallops, salad, cheese/crackers, dessert (birthday cake) and some adult beverages!
Sunday we tried a new place that features smash burgers. It was good, but not so good that'd we'd go out of our way (but we would eat there again if in the area).
Monday I made one of my favorites (and my sons). Its a Vietnamese dish that my mother made often when I was younger.... pork and eggs. It's a pork butt or shoulder, but into large cubes, seared then boiled in coconut soda, with hard boiled eggs. Slow simmered for 6 +/- hours, then served over white rice. the pork is so tender you can pull it with a spoon!
Tonight will be leftover pork and eggs (and possibly again Wednesday night too, there soooooooo much of it)
