What’s for Dinner Tonight?


Still working on emptying the fridge while doing the same to the freezer at a lesser rate. Used two of the remaining tomatoes as tomato water. Made a nice finishing liquid for couscous topped with ratatouille and a Merguez sausage (it’s made from lamb and has a lot of N. African seasoning).
Dessert tonight was two clementines.
 
We found the quality at Regal Eagle wasn't as good the last time we went too. 😥

We felt the same way when we were there last May; definitely disappointed when compared to our trip in Nov 2024.

Farmers market dinner. I bought the bread and mozzarella there. I added garden tomatoes and pesto.

The cool weather is making me want to go to a fair so I checked out the New food at the Big E this year. I don’t go every year but I’m leaning towards going this year.
@LoveDaisy You have an incredible garden and I am infinitely jealous! I used to love going to the Big E but haven't lived within driving distance in decades.

The NYS Fair is happening here, but we don't step foot near it anymore for a variety of reasons....the only thing we miss is the food, so we traditionally do a few nights of our favorite "Fair Food" for dinners the week before we go back to school. Tonight we are doing Gianelli Sausage sandwiches with peppers and onions and baked potatoes. I'm making fried dough for dessert(we aren't normally a dessert family, but it goes with the theme.)
We lived in Syracuse for 5 years and went to the NYS Fair every year. I know what you mean about not missing some of it, though.

I am finally back from vacation (sent DH home on the bus and stayed for a couple extra days with my sister). Here's a picture of the beach, usually quite calm, on Saturday with the off-shore effects from Hurricane Erin; the beaches were all closed for swimming (although the surfers didn't think that applied to THEM) and the waves and undertow were CRAZY.

Dinner tonight was roast chicken. I had a bag of masala seasoning sauce from Trader Joe's that I rubbed all over the chicken. Cut up onions, carrots, and tomatoes, with the remaining spice sauce mixed with coconut milk, went around the chicken. Served it with rice. It was good, but mixing the sauce with the coconut milk made it milder than I was hoping for. I'm going to have to figure out how to kick it up a notch if we're going to eat it as leftovers during the weekend.
