I made zucchini boats with ground chicken . Katie Lee's recipe we love. I didn't have mozzarella so I used sliced Provolone...just as good.

A nasty pizza from Papa John's. If I had to choose between them and Disney resort pizza, I would choose the latter.

It’s our wedding anniversary today and we’re going out to one of our favorite restaurants tonight.

Took some tomato corn chowder out the freezer and added some steamed clams and leaf spinach to it. Reminded me of Portugal somehow.

We had tomato, pesto, mozzarella sandwiches with refrigerator pickles. I love summer dinners.

I made dd chicken cutlets for her last “at home” meal. We ordered chicken fried rice from the local Chinese restaurant and had green beans as sides. Strange combo, but what she wanted. Today we’re on the road to OH, so dinner will probably be rest stop subs.

Anyway, not in the mood to cook much today/tonight, so it is burger night with left over coleslaw and chips

Last night we ended up in Epcot again for dinner. I had chicken and beef teriyaki and DH had shrimp udon in Japan. Not the best but it was good.

We haven't tried the quick service in Japan yet. It keeps getting dropped off the list....maybe someday.

Tonight is spiced salmon night. Need to come up with something different for sides though...maybe a broccoli slaw.

Last night we ended up in Epcot again for dinner. I had chicken and beef teriyaki and DH had shrimp udon in Japan. Not the best but it was good.

Thanks for letting us know DH lives udon and had that on his list for our next trip.

Last night’s dinner was fabulous. We started with a glass of champagne and an ahi tower. As entrees hubby, had a porterhouse steak and I had the 6oz filet mignon. Sides were corn cream brûlée and jalapeño potatoes au gratin. To end the evening in celebration of our anniversary, they served us a mini version of their butter cake with homemade vanilla bean ice cream. Perfect!

Not sure what dinner will be tonight. I wanted today to be a “chores” day and then plan some fun for tomorrow, but hubs has convinced me to take the weekend off and relax. We’ll see how that goes.

Supper tonight will be "Big Sandwiches," as the Little Guy calls them, basically make-your-own Italian subs. We are driving 3 hours to check in at our beach-side rental cottage today so I am trying to get ready. I'm packed, DH has his clothes laid out but isn't packed, only showered. I, OTOH, haven't showered yet. Once we are both dressed, we'll pack the coolers, load the car, and hit the road. The 2003 CRV started making funny noises this week so we are opting to take the little car. Hopefully the 3 of us and all our studd will fit into the Kia Soul!
