I made a pot of chili yesterday afternoon. Used it for taco salads last two days for lunch.That sounds perfect for a cozy night in! I’m thinking of making a big bowl of chili, especially since it’s been pretty chilly here. Soup weather is the best!
The way I make mine is using popcorn chicken, mashed potatoes, sweet corn niblets and chicken gravy (last night I thinned out some cream of chicken soup and used that as the gravy). Mix it all in a bowl together. You can also add shredded cheddar on top if you wish, I usually don't.What’s in them? I’m seriously behind the times

Happy Birthday to him!!It's DH's birthday. I wanted to do something special but life got complicated. Tomorrow we leave for a week at an ocean side cottage, so I'm doing minor meal prep, packing clothes, bedding, linens, staples, perishablesso pizza it is! DD/SIL are leaving for 3 nights at Disney in the morning and the Little Guy is coming to the cottage with us, so I want to bring enough food with us so we don't have to go out for meals. It's crowded in that area at this time of year, restaurants are packed, LG doesn't wait well... You get it.

Happy birthday to her.Tonight we are celebrating my younger granddaughter's 15th birthday. She just wants hot dogs and burgers. Big sister will make pasta salad. Her birthday is always bittersweet because we will miss her twin sister who passed when she was 6 years old.
