What’s for Dinner Tonight?

That sounds perfect for a cozy night in! I’m thinking of making a big bowl of chili, especially since it’s been pretty chilly here. Soup weather is the best!

I made a pot of chili yesterday afternoon. Used it for taco salads last two days for lunch.

Tonight was teriyaki chicken and rice.

Going to Little Italy was inspiring and fun.
Bought some ricotta and buffalo mozzarella. An assortment of deli meats and cheeses for a picnic muffuletta. An olive assortment plus some lovely antipasto veggies. Couldn’t resist a box of mushroom ravioli either. Finally, I replenished my hard cheese supplies: aged Parmigiana Reggiani, Romano and Asiago. Also snuck in a small wedge of ricotta salata just because I like its name; no idea what I’ll do with it.

We left the combined dish of ratatouille to roast in the oven while we were gone so when the aroma hit me when the door opened knew what dinner would be:

Ratatouille and bucatini.
A container of salad from the deli that I picked on while shopping and now meets its end in a civilized fashion, lol.
A cup of lemon gelato for a sweet ending.

Dressed for shop wandering today. Decided it’s time to visit the local Little Italy which might make my home attendant,Denisa, happy; she loves Italian food too.
No idea what I’ll get but I’m sure it’ll be good.

The way I make mine is using popcorn chicken, mashed potatoes, sweet corn niblets and chicken gravy (last night I thinned out some cream of chicken soup and used that as the gravy). Mix it all in a bowl together. You can also add shredded cheddar on top if you wish, I usually don't.
We have cornbread with it usually. It's pure comfort food.

We ended up at the lake with cheese and crackers & salami…me a glass of wine…hubby with ice water.

We went to a restaurant/entertainment venue to watch a comedy show. The food quality was what you'd expect, but we were there for the show anyway. We shared seared scallops, shrimp cocktail & a grilled pork chop w/mashed potatoes & broccoli.

After we were dropped off at the hotel, we decided to take a walk. We passed a restaurant that had live music, so we stopped in. We ordered a slice of red velvet cake to share. I had a glass of prosecco. DH ordered an old fashioned.

Last day (for now ) of picking the kids up after school...............no cooking tonight.
They go to Trampoline (DD takes them). DIL comes back sometime today or this evening.
It is leftover night......but we don't have many. All the leftovers from cooking all week went to DS so he would have something to eat.
There is some Wiener Kraut.

Tomorrow night we have tickets to see Nate Bargatze and have reservations at The Stubborn Mule.

Last night was great! We landed on time. We got to Epcot about 20 min. before our LL so rode SE to kill a little time. It was perfect timing!
Guardians was as good as ever. it!!!
We headed to Choza de Margarita for my Cucumber marg. and DH got a boring beer.
DH mobile ordered Fish and Chips at Yorkshire.
We were a little early even after strolling VERY slowly. It was wicked hot still. So of course DH wanted to stop in the pub. It wasn’t packed as usual since fireworks were about to start. I was even able to sit at a table while he ordered!
After getting his whiskey he walked over to pick up order so we were able to eat in the a/c.
After eating we headed out and over to MK to see the 11:00 parade. We got ice cream while kinda watching HEA. We sat on the curb and waited for parade.
It was a great night! But today I’m toast.

It's DH's birthday. I wanted to do something special but life got complicated. Tomorrow we leave for a week at an ocean side cottage, so I'm doing minor meal prep, packing clothes, bedding, linens, staples, perishables so pizza it is! DD/SIL are leaving for 3 nights at Disney in the morning and the Little Guy is coming to the cottage with us, so I want to bring enough food with us so we don't have to go out for meals. It's crowded in that area at this time of year, restaurants are packed, LG doesn't wait well... You get it.

Dinner out with friends tonight.

Last night, we tried a new recipe. My wife has been doing the Fast Metabolism Diet, and found this recipe for Buffalo Chicken on their website. We cubed up the chicken after grilling it and had it over a mixed salad. Pretty tasty.

Tonight we are celebrating my younger granddaughter's 15th birthday. We're celebrating a few days early because big sister is pregnant and scheduled to be induced in a few days so we didn't want her birthday to be diminished. She just wants hot dogs and burgers. Big sister will make pasta salad. Her birthday is always bittersweet because we will miss her twin sister who passed when she was 6 years old.
