What’s for Dinner Tonight?

Tonight would normally be a celebration dinner out, but it will have to pushed out until the weekend....

tonight will be panko crusted chicken strips. air fried, then made into chicken strip wraps. Maybe I'll grab some tater tots to go wioth them :P

I'll need to stop on the way home to grab a small cake (and a few other things). Today is our "Happy Gotcha Day". 8/13/2003 was the day my wife and I met our son for the first time. He was born in South Korea and came home on this day, 22 years ago. Several months later the adoption became final, and we became a family. He's fresh out of the military and started a new job this week, so the celebration dinner will be this weekend.

His birthday is actually in March. Today is the day he came home for the first time. He was about 4.5 months old when he came home and when we adopted him. Today has always been a special day for us, and we always celebrate it.

Hopefully we will have one of those soon. DD is working on it (but slow process being single). She is working on a child from Bulgaria.

We're back to eating out for a few nights. Last night we arrived at the hotel late & didn't have many options, so we chose a restaurant that was within easy walking distance.

We shared a couple small plates: Charred octopus tentacles served with crispy Yukon potatoes, microgreens, Salmoriglio sauce and Calabrian pepper olive oil. & Asian style fried calamari with spicy chili pepper sauce, black sesame seeds and scallions. (restaurant descriptions)

These dishes were an epic failure. It was like trying to wash down a bowl of sugar with a glass of sour brine. :crazy2: The only good thing in either dish was the potatoes. DH really enjoyed those.

On the walk back we stopped by the only restaurant still open & picked up a shepherd's pie to bring back to the room. This wasn't great, but it was edible, which was a big plus at that point.

We've decided to stick with the restaurants we know & enjoy for the next few nights.

No ice for a tomato ice bath so still will be working on the ratatouille tomorrow.
Switched over to the the corn instead and processed it down to cobs for stock and kernels now flash frozen and portioned into freezer bags. Freezer is getting full yet conversely I can see in the fridge again, lol.

Eating yesterday’s leftovers tonight. Decided to bulk it up with sautéed mushrooms, green beans and pad Thai rice noodles.
Everything prepped just need to heat up when I’m ready to eat.
