What’s for Dinner Tonight?

Sunday night we "celebrated" DH's and SIL's birthdays. DH is the 15th, on-in-law is the 17th, but last night was the most convenient time to all get together. DD to DH to an "old time movie" then all 5 of us had Thai takeout at our house.

Tonight... either BLTs or some sort of nachos or something with the leftover burrito filling from last week. We'll see how the spirit moves me, later this afternoon!

Tonight is Smothered Chicken.....smothered with mushrooms, onions, jalapenos and cheese.
A bagged salad.....I bought a couple and need to use them

Just adding we are in a high heat warning....again. 112-116 through Friday.....I.m ready for winter to come!!

This thread makes me think about dinner much earlier in the day than I usually do, haha! Still pondering what to serve tonight.

Okay. I got it! I'm going to bake up some eggplant rounds topped with sauce and mozzarella. I also have some chicken I will give the same treatment to. So it will be a baked eggplant/chicken parm dinner. I'm going to also pick up some corn from the farmstand after lunch with some friends.

Tonight is orange chicken and veggie fried rice, straight from the frozen department. This is the first day of school for students, so I know my teacher/daughter will be frazzled by the time she gets home. She teaches Special Ed and never knows what her day will hold.

last night was salmon using the spiced rub with roasted potato .... i was tired and forgot about vegetable until way too late

6 oz renegade sirloin, fries, broccoli, bread and Teddy Grahams from LongHorn Steakhouse, and a matcha Frappuccino from Starbucks after.
