What’s for Dinner Tonight?


Finally made it to the farmers’ market this morning. Wasn’t enamored with the tomatoes but the corn looked good so got some. Made some corn chowder with ham and bacon in it as well as used up some leftover Serrano pepper for tonight’s meal as well as a mini peach cobbler for dessert.
Could you please share your chowder recipe? Thanks!
 
I grilled burgers last night. Dh made them for his camping trip with ds. We were SUPPOSED to have the turkey burgers that I had in the freezer. DH mixed up the two packages and will be very disappointed when he realizes he took the turkey burgers to the campground. I can’t even warn him because they have no service up there. (But I must say…his burgers were delicious!)

This is a nice basic recipe to riff on to your hearts content. If you’ve never used the corn cobs to make the broth, it’ll be a real eye opener. I also add corn husks (but not silk) to the cob water because someone suggested it-she was right! Probably the silk adds even more flavor but it’s too much work and yep I’m generally too lazy. A bay leaf is nice as well.

I use pre cooked ham and crispy bacon for a texture difference but one is just as fine. Easy to make the soup richer by adding the dairy product of your choice: sour cream, heavy cream, crème fraiche, yogurt, etc.

Nice with or without meat which could also be shrimp, leftover roast chicken or your favorite white fish filets. Lovely with whole clams too.

Finally, if you’d like it a little spicy put some minced jalapeño pepper in but remove the white pith since that’s where most of the heat is.

Have fun making it your own.

PS: Not using fresh corn? So replace corn broth with chicken broth and an equal amt of frozen or canned corn.

We are having a NY strip steak salad with grilled romaine lettuce as the base. Finishing off a leftover bottle of sparkling rose with the meal. Apparently, DGD has been drinking wine since she arrived in France so since she’ll turn 21 in September no putting the genie back in the bottle.
Oh, for any “bubbleheads” out there, it’s Bugey-Cerdon, and makes a nice anytime summer wine at a decent price.

We’ll finish off the peach cobbler, warm the way DGD likes it with vanilla gelato for dessert.
 
MIL's house for dinner tonight for my Bday. She made a really good Chicken Parm casserole, medium size shells, cut up chicken sauce, cheese. It was yummy. Then a Chocolate bundt cake that was good, there was half left and we took it home so we'll have cake for a couple days.
