What’s for Dinner Tonight?

Finished off the chili bean and chicky salad tonight. Somehow I thought it would last longer!?
Bought some more strawberries and began prepping them for not sure what. Maybe I’ll figure it out when they are finished macerating.

Getting ready for the grill season by loading up on meats at Stew Leonard’s, a regional supermarket that leaned into the free sample idea early on; love going there but will try their delivery service instead.
I love Stew's, too. Learned about them when DD lived in CT. Unfortunately, the trip is a little too long for me to make now that she lives back here in Maine, but we sure do miss Stew Leonard's!

ETA: Love Zabar's, too. DD did a couple of summer training sessions with the Rockettes, so we spent quite a while "living" in Manhattan and visiting Zabar's was always a treat. Unfortunately, DD never made the cut at Rockettes; she was 1/4" too short.

Tonight we usually order takeout, but I had to buy I new fridge this past week and boy, that was $$$$, especially right before our Disney trip!! I ended up losing some food in the freezer because I didn't realize the fridge died. I salvaged some meat on the bottom of the French door freezer and tonight I am making Hanger Steak and some fries.
 
Well. It's 54 here today- big change from Thursday when it was 94, hahaha. Tonight I am making roasted tomato/basil soup and cheddar biscuits with salad. I should say I am attempting to make the soup. DD makes awesome tomato soup and mine is... not looking like hers (although it smells great). That's OK, I just heard from DH. He had a burger, fries, and 2 beers around 3pm so I'm guessing he won't be too hungry for supper anyhow, so if the soup is a bust, no big loss, right?
 
Just dropped off DGS. Usually we go out, but I’ve got to use food that’s in the fridge. I’ll probably grill up some chicken and make up a fresh salad. Lots of tomatoes and cukes to use from the garden. Need to bake up a couple of potatoes..hmm I’ll put those on the grill first.

We literally just go that late into the school year. We get a weeklong break in February.

We stopped in Fredericksburg, VA last night thinking we went far enough south to avoid I-95 traffic this morning. We should have known better. We used to live right there. It was NOT far enough south. 😫 I got a text at 10am saying our unit was already available! Ugh! I sure was regretting not getting up much earlier to start today’s trek. Didn’t get in until 4pm.
I’m not exactly complaining, but it’s not exactly what we expected. It’s much busier and congested than we had heard. We drove 12 hours to what seems just like the Jersey shore. (We live on Long Island.) 😂 At dinner, the waiter accidentally dropped the waters on my poor husband. 🤦‍♀️ And just discovered as I was making up the pullout couch for ds, there’s no blanket for him. Just little things, but I sure am hoping today was just a crazy kind of day to give us a good story!

Sorry if this seems disjointed. I tried to do that quote thing where I answer several people’s questions, but can’t figure it out.

Right now the “free”delivery special goes like this: your first three deliveries are free but they must be accomplished w/in 2 weeks of the first delivery. That’s kind of impossible for me and the way I shop there now (about once every six months) but I’ll stretch it out this time. First trip is mostly ground meats, beef roasts and veggies (broccoli crowns 37 cents each!) and the next purchase will be mostly poultry and fish. This should give me enough time to prep each delivery before the next one comes in.

Tonight I made an on the fly pasta dish I spotted on a cooking website. It was penne, cherry tomatoes and mint. Had some leftover frozen peas and crème fraiche so added that too. Refreshing.

Decided to start early and get the mundane tasks out of the way.

Bought 6 broccoli crowns yesterday simply because they were on a “can’t be beat” sale. Yes but that takes up a lot of space in my veggie crisper so they need processing immediately. So chopping them up today for a quiche, cream of broccoli soup and stir fry. Should I still feel like it, I’ll flash freeze the “zukes” too.

Already dry rubbed baby back ribs, and chicken wings for elder sister’s 4th of July cookout. Her youngest son and DGD will be there from their NW camping trip so looking forward to hearing all about everything. Somehow I wound up with 2 dozen eggs yesterday (plus the eggs already in the fridge 🤷🏽‍♀️) so I’ll volunteer some deviled eggs.
Now back to the kitchen.
 
Ended up having leftovers last night. Hubby announced he was too hot to grill. Which is hilarious, as I’m the one who grills! Hahahah.

Got an early start in my little veggie garden. More golden zucchini is ready, tons of peppers and had to cut down a bunch of the herb garden. 🪴 👩🏼‍🌾

Stopped doing kitchen tasks at noon and went for a walk. Had put some ribs in the oven that were done when we came back so put some on a plate with a cuke salad and calling that dinner. This was a test batch since I changed the rub ingredients around and am pronouncing them pretty good. Need to write down the recipe list so I don’t forget it again 🤪.
