What’s for Dinner Tonight?


We normally really enjoy farm to table restaurants, so I looked for one yesterday within 30 miles of our hotel. There was one that offered grilled chicken breast, so we gave it a try. After we arrived, we discovered it was much heavier on the farm than the table. :p It did have a fun theme complete with a country store, servers dressed in overalls & plaid shirts & even tractor rides for those who were so inclined.

Anyway, on to the food. For appetizers, DH ordered fried chicken livers. I had sauteed mushrooms. We shared the grilled chicken. It came with wild rice & steamed broccoli. The entree also included your choice of 2 out of 3 offered sides that they called "fixins". We chose cottage cheese & baked apples. DH ate chicken, rice & the baked apples. I had chicken, cottage cheese & broccoli. There was also some type of roll & baked apple bread. DH didn't care for either of those.
 
And it begins! 😎 I’m planning to put up pickled “zukes” this summer so wish me luck at the farmers’ market.

I’m so glad I over shopped on prepared food this weekend. It’s too hot to cook in the house right now.

@tarheelmjfan - there’s an article in today’s NYTIMES that gathers 27 no cook recipes together, many of which are health conscious. I can’t link them all here but can a few. Any suggestions on ingredients you’ve an interest in?

Tonight, I had some green salad mixed with lox, capers, lemon and cherry tomatoes with a cup of sorrel soup on the side. I’m going to look for some avocados in the market tomorrow; they are always good to add to cold dishes this time of year.

As for ingredients we like, we'll eat anything under normal circumstances. Unfortunately, that has needed to change. I'm trying to eat heart healthy, which limits my diet a lot. Part of that is being conscience of the amount of fat & calories I consume. This has proven to be difficult in our current location. We will eat any type of cuisine though.
