What’s for Dinner Tonight?

Finally have the London broil marinating. So I’ll grill that up tonight with mac & cheese and a green salad.

I wasn’t planning on hosting Easter, but since hubby didn’t have surgery…yet…I’m having a small dinner with a few friends and the kids that are town. Thank god for Honey Baked Ham online. It was delivered and I can add a few side dishes, make rolls and call it Easter dinner! 🍽️ 🐣🐰💐
 
Friday- Trader Joe's chicken garlic sausages, with or without buns. I sauteed a big pan of red/orange/yellow peppers, mushrooms, and onions, and threw together a bag of salad.
Saturday- Yesterday I made a big pot of chicken stock, sliced some turkey breast, sliced some ham, and also made turkey salad to leave for the troops as I headed off to visit my sister. She, our cousin, and I had dinner out, so multiple small dishes and a cocktail or two!
Today my sister and I are supposed to have lamb and stuffed mushrooms, but her insides are being disagreeable so I'm not sure WHAT dinner will be!
 
Catch up time now that I can use my computer again. I hate typing on my phone.

Wednesday was "back on the road day". There was a Ruby Tuesday near our hotel. We haven't eaten at one in probably 30 years, so we decided to pick up a Cheesesteak w/ fries to share in the hotel. Based on that experience, it will probably be 30 more years, before we try it again.

Thursday night totally redeemed it. We happened upon what was probably the coolest restaurant/bar we've ever eaten in. I made a reservation about an hour ahead of time thinking it was a normal restaurant serving tapas & cocktails.

We checked into the hotel, then went in search of. We drove around in circles trying to follow the GPS to a location that didn't appear to exist. DH finally walked into a catering company to ask them for directions. It turned out the restaurant was behind it. The only idenification outside was an A on the side of the building. You needed a "secret" code to enter, which they texted to you & we didn't read (oops). Only when you enter do you see the full name of the restaurant on the wall. It was like a private club, with the bar & a few tables under a roof with partial walls. The other tables were elevated & covered with sunshade sails tied together. That area was open to the sky. The chairs were padded patio chairs. The whole atmosphere was really awesome. On to the food... we shared a dozen oysters, grilled broccolini & Brasstown beef bavette.

Friday, we stopped at Trader Joe's to pick up something to make for dinner at DS's house. I'd been telling DH about all the TJ's things you guys make & wanted to try it. (We don't have a TJ's near our home.) We went with 4 different Asian foods, but obviously chose poorly. We'll try it again, but choose something different next time.

Last night, we had grilled chicken, TJ's mushroom ravoli (which we would buy again) & broccoli.

Tonight, grilled steak, baked potato, asparagus, deviled eggs, caprese salad, mixed olives, banana pudding & key lime pie.


TLDR:

Wednesday - Cheesesteak w/ fries
Thursday - oysters, grilled broccolini & Brasstown beef bavette
Friday - frozen Asian food from Trader Joe's
Saturday - grilled chicken, TJ's mushroom ravoli & broccoli
Sunday - grilled steak, baked potato, asparagus, deviled eggs, caprese salad, mixed olives, banana pudding & key lime pie

Last night, DH and I were so exhausted from cleaning the inside and outside of the house after being gone all week, we just ordered food from Go Burger. He went with a burger, I had the chicken sandwich and the chocolate cherry milkshake. We shared an order of onion rings.
Today for breakfast I made blueberry pancakes with a blueberry compote and chocolate chip pancakes, bacon and cinnamon rolls (because those are tradition for any holiday.)
For dinner I grilled strip steaks and we had roasted potatoes, roasted broccoli, corn and deviled eggs. For dessert I made a bunny shaped cake. Chocolate cake for his ears and tie, vanilla for his face. Marshmallow buttercream for the whole thing.

I know it’s an annoying thing to complain about because “regular” people don’t get the time off, but I sure do wish we didn’t have to go back to school tomorrow. I REALLY wish I had a day to recharge after today! Plus I just know my kids are going to be nuts tomorrow. 😂

May I ask how you make your marshmallow buttercream, please?

And as an educator as well, I agree with you, I am NOT ready to go back tomorrow.:snooty::crazy:
 
The recipe I have is super easy.

1/2 Cup of room temp. butter
1 Cup of powdered sugar
1 tsp of vanilla extract
7oz Marshmallow fluff

Beat butter and sugar until fluffy, mix vanilla extract and fluff in until incorporated.

It’s supposed to be enough to cover two 8” cakes. I happened to use it for two 6” cakes. It IS a sticky frosting so to work it down around the edges of the cake, I dipped an offset spatula in hot water. I didn’t wipe the spatula off before “molding” the frosting down. Just note, it’s a very sweet frosting. The kids LOVE it. 😂It worked very well with a darker chocolate cake.

Teacher here too but this year our spring break fell on Easter week! 👍🏻
