We had a Costco sized package of ground turkey (like 2 pounds) to get cooked up last night, so I used half for some Hamburger Helper for my son and the rest, I improvised and made a egg roll in a bowl, with green onion, mushroom and cabbage. Turned out pretty good.
Tonight it’ll be a dish I made up in my head: ratatouille and cannellini beans over couscous. Hopefully the couscous will calm the raging craving for carbs. Doesn’t happen often but maybe it’s the lack of meat that has me wanting them desperately .
Think I’ll dig into the lemon gelato I found in the freezer for dessert.
Thai take out tonight. DD's movers came today so we were all busy. DH and I drove about an hour in a UHaul truck to pick up some furniture. It's all solid maple and crazy heavy. I'm so tired...
tonight is usually leftover night, but DH will finish the meatloaf for lunch.
He is getting dinner out with DD and the grand kids between Ninja Warriors and basketball.
So I will find something easy in the freezer.
Ended the leftover ratatouille and bean dish tonight solo, no rice, no pasta, no nothing. Still good but tbh not as filling. Oh well, Sunday is almost here.
