We had grilled tuna steaks with an herb butter, roasted broccoli and quinoa last night.
Today, we’re on the road heading to Hocking Hills to camp for a few days and then visit dd at school. We’ll go out to eat once we unpack the car. Sadly, we no longer have a camper, but staying in a cabin, even a very rustic cabin, is better than being in a tent!

Hubby did a great job with the pasta! It was a very cheesy recipe and needed a protein like a ground turkey or beef. Overall though, it was very tasty.

Not sure what’s on tap today for din. It’s Master’s ️ weekend, so hubby will be camped out watching that…egg salad and pimento cheese sandwiches? Peach ice cream sandwiches? Might have to go to the store.

I did steak fajitas. On a flat round hard tortilla shell.

At Epcot there was a snack. That was around tortilla shell then avocado mash was put down then the meat, maybe sour cream was on top.

So I based my steak fajitas like that.

Tonight is a quick dinner--Chicken Strips in the air fryer.
Just had Sicilian pizza and salad for lunch.



Last night was sirloin tips and noodles.

Had Motor City Pizza Co. 3 Meat pizza for lunch, so may not be hungry for dinner. If not, might be a cheesey tortilla from the air fryer, or buttered popcorn for dinner.

I’m still not feeling great and didn’t want to cook. We ran to a local place for a late lunch. I had a grilled cheese and DH had the Philly steak poutine. I had poutine envy

Mixed the ingredients of two different red lentil soups together as we come closer to the end of Lent. It became red lentil with yam, spinach, tofu and lemony yogurt. Nice bright flavor and the chunks of sweet potato added heft while the silken tofu replaced the meat originally called for.

Today is my eldest's 30th birthday and he is home from Chicago for the weekend,

Ordering Chinese food for dinner (Various Apps... Gen Tso Tofu... Sweet n Sour... Fried Veggie Rice... Veggie Lo-mien... Pork Egg Foo Yung)

Also making a birthday cake. I really only have one cake that I make, but it is a banging chocolate cake and I am frosting it with peanut butter buttercream.

Champagne in the garden was my dinner last night. Spent 8 hrs outside turning soil, fertilizing etc. My husband ate his left over lasagna.
