What’s for Dinner Tonight?

BLTs and 15 bean soup. DH and I leave for NOLA and WDW tomorrow, so I'm making enough soup for DD/SIL/8yo to have another night. They also have leftover sloppy joes for one night, and a full 9X9 pan of stuffed shells. DD is a fabulous cook, but both she and SIL work full time, juggle the 8 year old, and are packing/cleaning so they can move out by the end of the month, so I'm leaving a few things ready for them when we take off for 9 days. Sure wish it was going to be warm where we are going, but it'll be warmer than here; right now it's 23F but going down into the teens tonight, and staying there for a while. Being in the 50s in NOLA and 60s in WDW sounds pretty good right now!
 

caught a couple of good sales on meat yesterday :banana: so in anticipation of spending a portion of the day helping dh break down family size packs of ground beef into 1 and 2 pound air sealed packs I just set up my crockpot with some small roasts I sale snagged to make enchiladas.
 
Bought some mussels and am I glad I did. Was missing them much.
Cooked them with sautéed shallots and parsley then quick braised in white wine with a little Pernod added. Made a salad of celeriac as the main ingredient that was much like a slaw. The ex’s grand aunt taught me how to make it and many other dishes. She almost made being married to him worth it..oops.
