What’s for Dinner Tonight?

You should NOT stay up thru half the night watching food porn under the guise of using up the contents of your vegetable crisper.
I finally decided that the most complicated recipe was the only way to go.
So now I’m planning to visit Arthur Avenue again (any convoluted rationale is a good idea ) to buy Savoy cabbage, various green beans and black kale . Doubt I’ll find fennel pollen at the produce market but there is always the Italian groceries.

This is what I’m making a variation of:

I kinda feel sorry for my weekend home attendant. She probably thought we’d be lounging today; wrong!! Oh well she’ll get her holiday bonus this weekend so hope it’s condoling.

DH had to drive down to DC to pick up our DDs. One is on break from college and the other just finished an internship. He made the 5 hour drive down, packed the car and drove right back. The girls couldn’t wait for NY pizza so that’s what we had.
In the meantime, I started the rainbow cookies. They’re a two day process, so I’ll finish those tomorrow (technically it’s already today.) Now that we have the whole family here, we’ll get the tree, decorate it and celebrate DD’s b-day. So we’ll see where she’d like to eat. We have a lot to fit into our Sunday.

My granddaughter and her DH asked for meat loaf, so I will be making that tonight, with buttered noodles and green beans.

Some of you will remember a disco song called “Last Night a DJ Saved my Life”. Well yesterday it was my home attendant soo no party dress was mussed, lol.
She was the voice of reason and convinced me that visiting Arthur Avenue on the weekend and so close to Christmas was a path to madness. I ll save the beguiling food porn soup until after vac and it’ll help brighten the often dull winter days.

So I took most of the vegetable crisper’s inventory and made a veggie stock for the freezer. Nothing left in that part of the fridge but some celeriac that will still be fine upon my return.

Tonight’s meal was a nice conglomerate of the week’s leftovers: a bowl of garlic soup and plate of Italian charcuterie. I’m seeing light at the back of the middle fridge shelf finally,

Tonight I made chicken parm with pasta, salad, and garlic bread.

I also frosted the sugar cookies I made yesterday. I’ve never really tried to frost cookies. I was more comfortable with buttercream than royal icing but it went ok. Neither are winning awards

Sorry it took me so long to reply to these posts. I didn't have my computer on the road & I'm terrible with typing on my phone. The past few days have been catchup time & trying to get some Christmas shopping done.

Canned soup, chili, shelf stable meals from the grocery store. There are quite a few varieties. We did order 3-4 frozen meals for the very tiny freezer section.
We have bread and lunch meat.
Breakfast is eggs (microwave them) on toast or oatmeal with sliced banana.

We went yesterday with no microwave in the morning. It broke. It took until 8 pm for them to replace it. Just a protein bar for breakfast and a sandwich for dinner.

Thanks for the tips. Do you have any particular brands & varieties of canned soups & frozen meals that you prefer?

Not the original poster, and not usually for dinners in the hotel room, but when we travel by plane, we bring a pop-up cooler, and hit the grocery store after landing, and have many of our lunches out of the cooler. We'll get a pack of Hawaiian rolls to make sandwiches with ... salami and cheese for the meat eaters, hummus and cucumber for the vegetarians. We usually get pre washed, cut fruit and veggies, chips, nuts, and a couple of packs of pepperidge farms cookies. Sometimes we'll get prepared foods like pasta salad or coleslaw. (We usually bring some silverware in a little pouch to make this easier). We'll occasionally make use of these items for hotel room dinner. We've also been known to wrap up leftovers like pizza, and either heat in the room or eat cold on the go.

Thanks. I love the Hawaiian roll/sandwich ideas. DH & I agree this would be a preferable substitute for fast food, when we're driving. I'm going to give it a try next trip. Since I'll need a cooler for those, I can add some fruits & veggies. We always travel with paper plates, cutlery, etc., so that won't be a problem.

As I mentioned above, we got home from our latest trip a few days ago. Since then, I've made spaghetti & beef stew. Those were repurposed into baked spaghetti & meat pie for other meals. That lasted us through lunch yesterday. I wasn't feeling well last night, so we had frozen pizza. Tonight is TBD.

Thawing out some salmon. I marinate it in teriyaki sauce and freshly minced garlic. I'm thinking maybe complementing with some white rice or couscous.

I posted on another thread that I did an invantory of the freezer and I've got enough premade and leftovers I am good through December 23rd. tonight is pulled pork (thanks to dh who did a huge shoulder on the big green egg a couple of months back which allowed me to freeze large chunks).

Yes it can......you just need to saute the Italian sausage first. I use an Instant Pot.

Pizza Soup

• ½ lb. Italian sausage
• 1 large yellow onion finely chopped
• 8 oz. fresh button mushrooms sliced (or substitute canned mushrooms)
• 3 large garlic cloves minced
• 1 c. water
• 2 15- oz. cans Red Gold® Crushed Tomatoes or 1 28-oz. can Red Gold® Crushed Tomatoes
• 1 tsp. dried basil
• 1 tsp. dried oregano
• ½ tsp. dried thyme
• ½ tsp. dried rosemary
• 4 oz. sliced pepperoni chopped
• ¼ c. grated Parmesan cheese
• 1 c. shredded mozzarella cheese
• chopped fresh basil and/or Italian parsley optional garnish

Instructions​

• In a large saucepan over medium to medium-high heat, sauté sausage and onion, stirring occasionally.
• When the pink color in the sausage has almost disappeared, fold in the mushrooms and garlic. Cook for 5 more minutes, stirring occasionally until mushrooms are softened.
• Add water, crushed tomatoes, diced tomatoes, dried basil, dried oregano, dried thyme, dried rosemary, and pepperoni. Bring to a boil and then immediately reduce heat and simmer for 20 minutes, stirring occasionally.
• Before serving, stir in Parmesan cheese. Top with mozzarella cheese. Garnish with fresh basil and/or parsley, if desired.

I don't use tomatoes.....I use bottled pizza sauce. I use broth or stock instead of water, especially if I have one open.

Ordered two slices of pizza and a turkey and avocado lettuce roll from a nearby diner. That should be dinner until at least Wednesday.

Last night DD decided on Italian. I had angel hair pasta in a light red sauce with shredded crabmeat…delicious! Had the leftovers for lunch. Tonight, we HAVE to go out again as it’s DH’s birthday. It really wouldn’t be right to not celebrate him as well. I’ve convinced him he wants a steakhouse instead of Go Burger!
For dessert, my other dd and I made him a Samoa Cheesecake. Those are his favorite Girl Scout cookies. (Some of you may call them Caramel deLites.)
