What’s for Dinner Tonight?

Visited the Metropolitan Museum’s crèche display which is an annual event that always puts me in the right mood. Back over to my old stomping grounds on the Westside and ran into a nabe who walked us down to Zabar’s where we ended the chat at the junction between the smoked fish and deli sections. She went right and me, left in our hunt for just the right nosh.

Nice way to spend the day and I bought some poached salmon with watercress sauce for a leisurely dinner.

After a couple of leftover nights the past 2 days, we're having hamburgers / veggie burgers and baked beans tonight.

Went to dinner with a few coworkers. I shared fajitas with someone and ate my body weight in chips and salsa.

I still have at least one more cookie to make but first platter of the season for an all day meeting tomorrow at work

Trying to get organized in many directions: general clean the house, fine tuning vacation menu, packing my suitcase and informing the right people of what to do while I’m not here.

No cooking day. Made a charcuterie plate with whatever is leftover. Probably will continue this until the fridge echoes. Tonight it was Calabrese chile rubbed cheese, pancetta bread, roasted peppers and zuchinni.

Your cookies look amazing. I need to get on the ball and crank more out. All I've done so far are ginger cookies, and they've been getting eaten pretty fast! I love when I have a big variety on hand and can put together a beautiful tray like you have! I know for sure this coming weekend will be thumbprints with icing. Maybe I will get to the nutella chocolate chip later today. And seeing the snickerdoodles, maybe I'll find time to add those in.

All of the cookies look great, LoveDaisy. I’ve been baking away as well. Yesterday, I made S’mores Cookie Bars, Coconut Macaroons(which only use egg whites), and Butter Cookies(which only use egg yolks). They’re my “partner cookies.” I make them on the same day to not waste the eggs.

Since the oven was being used for baking, dinner was Triple Pork Black Bean Chili from AverieCooks.com. First time making it. It was really tasty.

Today I went over to a friend’s house to bake with her. We knocked out the Big Chocolate Chip cookies, Buckeyes, Peanut Butter Blossoms and some Coconut Macaroons for her.
(Lunch/Dinner was snacking on cheese & crackers and mimosas.)

Haven’t cooked much since Saturday. We ended up at urgent care for DH. We’re told it was gastritis and a suspected ulcer. Endoscopy tomorrow. So, nothing but bland food while we figure this out. Lots of oatmeal and bananas.

I had an all day meeting at work and demo started on the house today so I was looking for an easy dinner. Made ravioli from a local pasta shop with salad. Cookies were a big hit today!

At my parents yesterday and today. With therapists and doctors appts for dad, take out pizza was easiest last night. Tonight was rainy and windy....I made roast beef, homemade mashed potatoes with homemade gravy, peas and a neighbor had dropped off homemade bread yesterday. It was delicious and plenty of leftovers for mom and dad to have after we leave for work tomorrow.

Sure! I use the recipe I found on Mel’s Kitchen Cafe.

S’mores Bars​

INGREDIENTS​

• 2 cups (284 g) all-purpose flour
• 2 cups (200 g) crushed graham cracker crumbs
• 1 teaspoon baking powder
• ¼ teaspoon salt
• 1 cup (227 g) butter, softened to room temperature
• 1 ½ cups (318 g) packed light brown sugar
• 1 teaspoon vanilla
• 2 large eggs
• 2 cups marshmallow topping, like Marshmallow Fluff or Creme (don’t use actual marshmallows as they will melt into the dough, it needs to be the fluff or Creme)
• 2 cups (340 g) milk chocolate chips

INSTRUCTIONS​

• Preheat the oven to 350 degrees F. Line a 9X13-inch pan with foil, leaving a 2-inch overhang on the 2 short sides. Grease the foil with cooking spray and set aside.
• In a medium bowl, combine the flour, graham cracker crumbs, baking powder and salt.
• In a large bowl, using an electric mixer on medium speed, beat the butter and sugar until light, about 2 minutes. Beat in the eggs and vanilla until well combined. Reduce the mixer speed to low and add the flour mixture, mixing until combined.
• Divide the dough in half. Press half into the bottom of the prepared pan until the dough is evenly flattened. Dollop the marshmallow topping on top of the cookie base and gently spread into an even layer. Sprinkle the chocolate chips on top.
• Scatter the remaining dough over the top in clumps. Don’t worry about completely covering the top, the marshmallow and chocolate chips should peek through.
• Bake the bars until golden brown, about 30-32 minutes. Cool completely. Remove the bars from the pan using the foil overhangs. Cut into bars and serve.

Last night, DH made stuffed peppers. We hardly ever have them and it was really good.

I was supposed to go out tonight with friends, but that got cancelled. Instead of going out tonight, I made some sort of mystery meat. I defrosted what I THOUGHT was a pork tenderloin. Instead, I came to find out I had marinated some sort of meat chunks. I cooked it but I still couldn’t tell if it was pork or beef! Only gourmet cuisine over here!
