What’s for Dinner Tonight?

My aunt's birthday is today, and I offered to make her whatever she wanted for dinner. She requested tuna melts, which is just a hoagie roll piled with tuna salad and American cheese put under the broiler. I was going to make her a steak or something, but tuna melts it was.
I LOVE tuna melts, but never make them because of the high fat content. Definitely a special treat dinner- although we don't put ours under the broiler, we make them like grilled cheese with tuna salad- even higher fat content hahaYUM!
 
Used a new way to make fried rice using pork tenderloin, shrimp, frozen rice and various root veggies still in the fridge. Threw together a Chinese style soup with dumplings and scallions as the rice baked on the sheet pan.
Quick and easy with a minimum of dirty dishes.
 

"Grandma's Chicken," which is chicken pieces rubbed with a mayo/dried Parmesan cheese/garlic powder goop, then baked. Side dishes were frozen peas and a rice-a-roni wild rice blend. Quick and easy, with minimal clean-up.
 
The Resident 8-year Old is staying overnight with his grandparents and the 30-somethings are having dinner with friends, so I bought a nice T-bone steak for DH and me to share, with baked potato and salad. Simple prep, simple clean up. I'm guessing there'll be a bottle of red to go along with the steak!
 
Got a bit creative using precooked foods. Have a fair amt of portioned deboned oxtails in the freezer left over from the beef stock making and decided to start with that.

Heated the meat up with onions, garlic and julienned peppers. Added a bit of adobo sauce and beef stock to the pot and covered. Spooned meat filling onto warmed corn tortillas with cucumber spears, raw Japanese turnip slices (taste a lot like radishes) and roasted tomatoes. Reminded me of birria but with less work. I’ll make some up to bring on our vacay.

For dessert I think I’ll finish the half pint of sorbet that still remains in the freezer. Don’t know which kind it is so it’ll be a surprise to me. And therein lies part of the beauty of living solo: yr ice cream is always there.
 
We went to a Halloween party today. The food theme was Mexican, we had a bunch of snacks and tacos. Dessert was the caramel apple cheese cake bars I brought, brownies with Mexican hot chocolate frosting and skull white chocolate candies that were hand made, and churros.

Thanksgiving dinner! Turkey and the works!

(I’m bringing dessert…)
:goodvibes Ah yes...we hosted our first family Thanksgiving in the new place this year and the turkey feast was epic! I made a big turkey and stuffing casserole for Friendsgiving last Saturday and used the last of it up in Tuscan turkey soup for lunch all last week. Not sorry to see the end of it now. :laughing:
