What’s for Dinner Tonight?

Wandered over to Manhattan’s newest park, Little Island, yesterday. It was formerly a pier on the Hudson and what fun did we have. Great music and views.
Next stop was Zabar’s on the Upper West Side, my old stomping grounds. Stocked up on some truly needed pantry goods like…Turkish pistachios, lol. Never know when you’ll run out of them.
Been craving a decent piece of non farmed salmon and was in the right place. Bought two center cut poached salmon filets with watercress sauce making me a happy lil piggy two days running. Last night had it with a green salad and tonight with sliced cukes.
I’m so jealous you have all of the delights of NYC at your fingertips! So much amazing food in that city!
 
Tonight we had soft tacos. Ground beef for DH and black beans for me with rice. I like tacos way more than I should 😂
Same! I love making soft tacos. So easy and after dinner I mix up all the leftovers and make burritos for the freezer.

When the kids were little I always joked that it was the only meal I made where no one cried or pouted.
 

Farmers’ market Tuesday!
I’m limited to immediate use purchases since the freezer’s cup runneth over so I went looking for parsnips and wound up with Hakurei turnips aka Japanese turnips which I’ve never cooked before. They looked so pretty just couldn’t resist and again no parsnips. May have to visit Manhattan for them.

So I sautéed the chopped green tops and roots in butter with a little garlic, salt and pepper. Served with a nice piece of maple glazed pork tenderloin. Had a cup of veggie soup as starter.
 
Today went all kerfluffle and I didn't get out of work until about 8, so we picked up pizza on the way home. I just didn't have it in me to cook and clean the kitchen, before staying up stupidly late to get grading ready for tomorrow.
 
It has been a week of easy dinners - sandwiches, leftovers, egg sandwiches.

FInally got a little break today and threw a giant roast in the CP with some seasonings and carrots. Will make some noodles or potatoes later. That will be dinner for the rest of the week.
 
Something to do with pork tenderloin. And I've got potatoes, carrots, pumpkin, delicata and onions to choose from to make some sort of side, but no ideas exactly what I'm doing with any of it.
 
Being a lazy dinner cook tonight.
Been baking cookies though.....starting on Christmas ones. Hope my freezer can handle it.
We'll be at WDW from Dec 1-12 and we're hosting this year so have to get going.
Still will have to do a lot of decorating and wrapping when we get back.

Anyway.....tonight is Burger King night
 
All this recent talk of tacos reminded me that DGD adores hard taco shells so when I noticed a taco kit was on sale sent my home attendant to buy one for me. Pretty reasonable in price just hoping the tacos don’t break in the box. It’ll be a long trek to FL. and if I was thinking would have bought them there 🤷🏽‍♀️.

Made an omelet into which I put all the leftovers that made sense. Had a cup of veggie soup as well.
 
Taco crunch bowls, recipe courtesy of the local school lunch program, as dictated by the resident 8 year old! I cooked up some ground turkey with green chilis, cumin, garlic, and onion. You mix the meat with cheese and sour cream, and heat in the microwave. Top with crunched up tortilla chips and shredded lettuce, and mix that in. Then you have your choice of toppings: Diced tomato, diced yellow pepper, sliced scallions, sliced black olives. I made a pot of adobo seasoned black beans and a pot of rice, for the "more mature" tastes in the family. The 8 year old had beans on his taco crunch bowl and deemed me "an even better cook than the ones at school!" (jeez, let's hope so!)
 
My aunt's birthday is today, and I offered to make her whatever she wanted for dinner. She requested tuna melts, which is just a hoagie roll piled with tuna salad and American cheese put under the broiler. I was going to make her a steak or something, but tuna melts it was.
