What’s for Dinner Tonight?

The plan for tonight was the tacos I planned to make last night but my dairy order came and I got apple cider donuts from one of the local orchards so I had a donut for dinner. First week of meal planning is not going as planned 😂

A busy day giving my new vacuum sealer a work out. Put up a skirt steak and boneless chicky parts in individual marinades; re-sealed soups already frozen in Ziplock bags so there are less concerns of leakage. Also harvested herbs into individual pouches.
I’m really liking this new machine!

I made one last (possibly) soup today that used up almost all my frozen leeks:
potage poireaux with many fewer potatoes than tradition calls for but there’s that low carb thingie happening still.

Supposedly, eating this soup will change around my desire for tasty but less healthful foods. So tonight starts a full week of soups and salads.
I love my vacuum sealer. Before I got one there was too much ice on all the meats.
 

DH was kind enough to share his bad cold with me, so I didn't feel like going out tonight. We decided to partake of Drury's offerings again tonight. We had Vegetable Florentine Soup & Taco Salad.
 
Well it’s night 3 of not making tacos. I may have to just move on from that idea. 😂

My afternoon took an unexpected turn that resulted in me driving around town looking for my dad. Apparently he got of the car at the post office because my mom was “trying to kill him” with her driving and he doesn’t believe in cell phones (I can’t even make this up!) 🤷‍♀️ so we got Chinese take out.
 
Canadian Thanksgiving is a week from Monday (October 14) and we were invited out for our first "Friendsgiving" of the season. It was a lovely evening and the hostess served ham and homemade applesauce, with a bounty of vegetables from her garden and pumpkin pie for dessert. Full tummies and full hearts. :lovestruc
 
Family lunch today. Tacos, tamales, taquitos, chips and all the fixing with cupcakes, ice cream and brownie brittle for dessert.......so dinner will be leftovers or whatever we can find to fix fast....or nothing
 
I'm finally feeling well enough to cook (RSV and pneumonia), so tonight I have a chicken to roast. I squeeze a few lemons into melted butter and then use that to coat the chicken along with garlic and onion powder, salt and pepper. I place the squeezed lemons into the cavity before it goes into the oven. You don't eat those, it's for adding flavor to the chicken. I learned the lemon thing from an Italian lady when I lived in Philly.
 
I admire those who meal prep for the whole week.
It is the season for me to make meals for the farmers —DH and the helpers for harvest so they had sandwiches today.

Then this is my day off: I made a 3lb meatloaf. They will eat it later this week. I cooked 3 lbs of hamburger - separated into bags just ready to go into other meals.
I made a 3lb chicken enchilada pan to freeze for them to eat probably this week.
Did the rest of the potatoes into mashed.
 
Last night individual pizzas.
We buy premade pizza crusts from bakery.
Everyone choose their own toppings.

Tonight frozen appetizers and a big salad. Lazy supper.

Tomorrow salmon, rice and either salad or veggies.
 
I am continuing to take advantage of the beautiful weather and we met another couple for a late lunch on the water. We were in Stonington (right in the Rhode Island border) so I got a hard Dels frozen lemonade (if in RI get a Dels frozen lemonade!) with lobster bisque and they had fresh Stonington scallops that were caught that morning. Which made my decision easy! They were the best scallops I’ve had all year.

I took a drive two towns over to check out a new Italian market that opened this week. I grabbed us sandwiches for lunch which were phenomenal. I got a chicken cutlet and DH had meatball. I also grabbed some of their fresh manicotti and garlic bread for dinner. I’ll make a green salad to go with it.
